Expect innovative twists to your regular yu sheng with the 30 Bencoolen Sure Huat Yu Sheng ($39.80/$69.80) - a contemporary rendition of this festive dish which comes with smoked Norwegian salmon that has been encased in a koi fish shape made from tomato liquid jelly, shredded trio radish, crispy carrot, chunky Thai mango and a spring onion & ginger dressing, in addition to the usual items in yu sheng.

Another unique dish to look out for would be the Roasted Organic Corn Fed Chicken ($39.80) that has been marinated in a five-spice mixture and roasted till the skin turns golden brown. Garnished with crispy garlic, almond flakes and prawn cracker, this is a sure-win dish at the dining table.

The slow-cooked chicken rendang was tender and well-marinated in spices, that goes well with the coconut rice that was fragrant, light and did not overwhelm in taste! It also comes with homemade sambal egg, pickled Nonya achar, peanut and ikan bilis that are common, yet great accompaniments to this dish!

Don't expect this to be The Coconut Club-esque sort of hipster Nasi Lemak that comes with loads of emphasis at the price tag you are paying for. It's a $18++ Nasi Lemak that you are looking at here served in a restaurant at a boutique hotel that's meant to showcase local flavours — the Nasi Lemak here is a more refined version of the coffeeshop variants we had grew up liking for supper, so expect more controlled flavours here rather than the boldness of the ones we love.

The LOCAL Nasi Lemak comes with coconut rice, slow-cooked chicken rendang, nonya achar, peanuts and Ikan Bilis and a sambal egg. The rice carries a light whiff of coconut fragrance; just a very light touch, while the rice is actually decently moist and carries a good texture. Found the flesh of the chicken to be considerably tender though a little difficult to come off from the bone, while it carries a good flavour from the rendang which is fragrant from the spices and is rather creamy and lemak. Nonya achar was refreshing; crunchy and tangy while the Ikan Bilis were crisp — none of that chewy, aired-out nonsense here. Not too bad overall, though its pretty certain locals wouldn't be the ones shelling out $18++ for a plate of Nasi Lemak here.

From Local Restaurant and Bar, a new restaurant that serves local and local fusion fare at the newly-opened Hotel 30 Bencoolen along Bencoolen Street (opposite the road from Hotel Bencoolen.

Not sure if it's due to us taking around 5 minutes to take photos of the dish, but the Tendon was especially overwhelming considering how limp, soft and flimsy the Tempura pieces were with the sauce being drenched over it. The sauce also seemingly could have done better if it could carry more of a spicy kick and also more crustacean sweetness. With so many other Tendon options out there at prices lower than this (this one cost $22++), this is one of the dishes that need a lot of improvement to match up the standards already set by the Japanese specialty Tendon stores in Singapore.

It comes with chocolate ice cream, cherries, chocolate sauce and toasted almonds, which briefly lifted up the taste of the fritters.
