my favorite dish of the burpple beyond set special ($98)â¤ď¸ rich in unami flavor from the generous amount of crab meat topped with ikura and seasoned with scallion oil đ¤Żđ¤Šâ¨ i could have another portion.
Helmed by Chef Christopher, Brine is a modern and contemporary restaurant which sources ingredients locally to create seasonally inspired dishes. Take for instance their Knife Cut Noodles with Buttered Crab ($29) that just so happens to be part of the Burpple Beyond menu!
Ordered the Burpple 5 course set. For the starter we chose the charred cauliflower and it was the best dish of the night, good flavours!!! Mains were chicken with grains. Flavors were disappointing and it tasted very flat and just salty. Dessert was unique with coconut and hae bi hiam. Canât recall much for the other dishes. Overall good but nothing much to shout about.
Truffle capellini, wild ceps, I think. Cause they didn't explain to us.. They serve us like Zhi Char style.. During this pandemic time, I think we should not share portion. If want us to share portion, mayb want to give us extra spoon for serving.
Interior of the place is cute, warm and cozy. The food portions were quite small, but the taste is unique. For the price paid, would say itâs interesting to try once! Used the Burple 6 course set meal.
To note that although it says itâs 6 course set meal, 4 of them are sharing plates...

Dinner at Brine was really. Flavours were clean and not too overpowering and consists of 4 shared plates and 1 individual main course and dessert
Sharing plates:
Duck Rillites and Sourdough - good flavour
Salad - Was flavourful with a touch of brininess from that tuna/anchovy dip
Parmesan, onsen egg, potato espuma - a nice touch to make the egg the star. Goes well with the bread too
Pasta - well flavoured with a strong mushroom flavour that would have benefitted from abit more acidity
Main: Confit Chicken Leg, Sticky Rice, Ginger, Scallions - A very big and flavourful dish for the portions so far. The rice was almost risotto like but definitely retains that asian flavour and bite! Innovative and very generous
Dessert: Smoked Hay Semi Freddo and Chocolate Textures - The star finish. Smokey ice cream with chocolate soil and shavings. Balanced and not too cloying.

Chicken leg confit shown in the picture is nicely cooked. I felt that the ginger slices is a little overpowering for my taste.
Overall I felt that the portions for the entire 5 course is too small, leaving me quite disappointed. Why say it is a 5 course meal if 3 of them are to be shared? I just donât get it. It comes off as being very stingy by the restaurant and the title 5 course meal is very misleading.
Worse still, the price of $88 nett is seriously unjustified and a total rip off given the really small portions served for 2. Imagine this course without the the 1-for-1. Absolute daylight robbery.
To be honest the food was quite good. Itâs just that the portions were too small for the price of $88 to be justified. I am bewildered as to why the other reviews say the pasta (3rd course) by itself is filling by then. Wonât be coming ever again. Go to this place at your own peril if you wanna feel ripped off in the end.
(Part of 5 course meal) This was done really well, meat was very tender, cooked very well. Vit perhaps the flavours didnt gel well with me i though the ginger was too prominent in the dish and wasnt that well balanced
Went for the Beyond 5 Course Deal, great experience! Each dish was done well, very interesting combinations and good mixture of flavours. Appetisers were the best out of the courses. The Salted Confit Chicken Leg was very tender but perhaps too different for my liking. Smoked Hay Semiffredo was also a nice touch for the end of the meal!
Best Dishes: Truffle Capellini, Lettuce Tonnato Dip
Vanilla ice cream with broken pieces of chocolate and gold flakes.
The ratio of chocolate to ice cream is too much that I don't get to enjoy it unless you are a chocolate lover. It feels a little too heavy after having the confit.

Extremely juicy and tender salted confit on top of a bed of flavourful sticky rice soaked in lemongrass and ginger gravy that makes it so delicious and refreshing.

The sourdough has a chewy texture and crisp, crackling crust. It went well with the duck rillettes.
The onsen egg came in a different and interesting approach with a layer of seaweed powder. The presence of truffles is quite strong but not too overwhelming.
We love the creamy capellini that was infused with truffle oil and shrooms with tobiko and nori strips. It was served cold and full of flavours as an appetizer to share.
Service staff will ask if you'd like still or sparkling water. Both are chargeable. Ask for iced water instead.
Do make reservations since the place is quite small.
Ordered the burpple set (88nett for 2pax), which gives you 4 starters, 2 mains and 2 desserts.
Appreciated how each dish all had very strong flavours, although some might find them overpowering.
Liked their creamy mushroom pasta which had fish roe in it creating little bursts of flabour with each bite. All the starters were large on flavour, which was great since we had the sourdough to mop it all up.
Service was excellent too by the way.
This European restaurant had been on my wishlist the longest time. Here's a dessert that looks like a parody of exotic cuisine. It's messy because it's a deconstructed chocolate dessert. What stood out was the smoked ice cream. If you've never tried it, it's basically cigarette flavour.
This European restaurant had been on my wishlist the longest time. I loved this dish. It's quite difficult to impress me with fish. Some more I don't like most raw fish. But mi-cuit a good fish and wow. Similar to salmon, this was fishy enough without becoming nauseating. The medley of very wet mash, tom kha, puffed rice and ikura was the perfect supporting cast to the fish.
This European restaurant had been on my wishlist the longest time. I prefer a bigger cut of meat, but overall this dish was enjoyable. The lamb had a texture similar to gyutan, very dense, which can be an acquired taste. The orange mash, which I assume to be the curried carrot, was very good with enough spice. The purple carrot was just fun haha.
