Time to do some spamming.
I will be introducing my list of must-eats whenever I visited Seafood Paradise.
Three types of egg giving the dish three different dimension in Term of taste, smell and vision.
The egg gave the dish a light golden coloring. Made the look of the dish more classy. Most importantly, the egg was soft like silk wrapping the gravy with the Chinese spinach.
The century egg provided the color contrast. Black diamond in the mid of green jade and gold. The alkaline from the century egg actually helped to soften the toughness of the Chinese spinach creating the balance in the dish.
The saltness of the salted egg combined with the stock giving the dish a very refine saltness. It was not other dish whereby I can only taste the dish is "salty". It might seem like a easy dish but the timing every ingredient is different. All of them can't be throw into a pot at the same time, you will never able to get this kind of texture and consistency.

I can't really remember the name of this dish but it was one of the best tofu dishes I ate in Singapore.
They deep fried the tofu and topping with gravy and pork floss.
The gravy tasted like the abalone gravy. Just two big scoop of it, I can finish one big bowl of rice.
The lightly fried surface giving this dish a layer of fragrant which hardly to be found in any other restaurants.
When the waitress cut into the tofu, the pork floss fall in between of the gaps. Even with the flavorful gravy, the pork floss actually able to enhance the taste giving another meaty taste to the dish.
Because they added egg into the tofu, you might able to see that it was slight yellowish.

(Good indication of fried rice) The moment it was served I can almost smell the fragrant of the egg. The egg was able to merge the sweet flavor from the seafood with the normal white rice. Really good.
I must say their food tasted good but the service was not very good. We waited for almost 15mins in between dishes. They served up all the savory dishes other than the crabs then the fried rice was served. The floor crews were slow in the service. (It might be because they are under-paid and overworked. Hahahahaha)

(A very good idea from the chef) Giving the nature of the strong butter based sauce, countering it with a even stronger herb is a very bold move.
However, I love to taste the natural sweetness of the crab and this dish was slightly too heavy, covering the flavor of the crab.

While the chef was frying the crab, the juice from the crab got mixed with the butter and stock. It was like mixing a hot mayo with crab flavoring.
The crispy bun been clothed with butter sauce. It was like eating a piece of happiness. So happy.

The taste was very subtle and simple. Flavorful and filled with the freshness from the crab.
The cellophane noodles, 冬粉, thicken up the gravy and soaked up the sauce. It was like eating shark fin but in a longer strand.
A little trick which I like. Put the cellophane noodles with some gravy into the shell. Eat within the shell and you will be able to enjoy all the flavor of the crab!
