The rice was somehow not harder than normal even though it seems like there's more integrity(I think it's less cooked but it doesn't taste raw at all)
There's also a unique taste to their base, it's got a medium body but it doesn't taste too seafoody, so not sure what's in there.
Overall it's fine but not superb, there's barely any crust
Australian lamb, the flavour is pretty good and the texture is unique in that thered some bounce, but there's no crust at all which is disappointing. The sweet raisin sauce was alright, veggies were nice and the potatoes were crispy
However for this standard this is severely overpriced, even if it's served in a restaurant it shouldn't command more than 30++, much less w this kind of plating and atmosphere

Yes, we tried more than $1000 worth of different types of caviars that evening, but our key takeaway was the new friends made that evening. Naturally, after a few bottles of the premium wines, champagne and sake courtesy from @dq_sg_ken, things got even more fun.

Now about caviar, if you ask me which is my favorite, for me it's no doubt @caviar8gems top grade No 8 Royal Beluga, but that's also the most expensive. For the optimal quality-to-price ratio, I'll go for No 2: Superior Oscietra, which I heard is also their best seller.
It's like a lobster thermidor, but they use light tasting cheeses. This is because Don Quijote brings in live lobster for this dish, and in order to focus our taste buds on the natural sweetness of the fresh lobster, they went light on the cheese. And wise choice, the lobster flesh fell off easily from the shells, while the meat from the claws still has the taste of the ocean.

Ever had pork cooked medium rare? This isn't just any Iberian pork. Owner Ken explained to me this is a very premium grade of Iberian pork exclusive to Don Quijote. It's so clean that it can be cooked medium rare, and that's when I tasted how a good cut of premium pork could taste like - sweet, nutty, and not gamey at all.

Imagine a whole plate of this lobster paella, where each spoonful is a flavor bomb filled with intense seafood flavour. The rice in the center is soft and plump like risotto, while those at the sides have that crisp burnt edges. And because the pan is shallow, there's a good mix of burnt rice to "risotto rice" ratio. They also used live lobster, so the flesh of the lobster is soft and juicy.

Finally got to try the tapas brunch at $38++ inclusive of free flow soft drinks and juices. You can opt for free flow sangria beers and wines at $58++ and its really very value for money considering the types of tapas pastas soups and desserts you get to try. Be sure to bring an empty tummy!

The richness from the seafood was well absorbed by the rice, it was simply an enjoyable and delicious plate of panella.
Grilled Secreto “Iberico Pork”
This was the best tapas of the night! Superbly tender and juicy grilled iberico pork which could be enjoy by itself. LOVE IT!
Tenderloin Steak Cubes with Blue Cheese
The signature and must order dish was just alright for me, it wasn’t much of a “wow” factor. But the flavour was good, and it was cooked to medium rare perfection – tender and juicy.
Fried Battered Squid served with House Sauce
The squids were well battered and fried till golden brown, it was too greasy at all. Slightly chewy texture but yet crunchy exterior. It damn addictive!
Eggplant, Oven-Baked in Casserole
I love eggplant, and this was damn good. It wasn’t too mushy, and the tomatoes give a fresh balanced in the palate. Damn good!
Baby Spanish with Spanish Ham, Rasins and Toasted Pine Nuts
This could probably be the most expensive salad anyone could order, but it was so damn good.
Croquettes with Cured Spanish Ham
Fried potatoes with Spanish ham could ever go wrong! Good amount of potato filling, savoury ham and creamy mash that blanced so well together. Good flavour and texture with crispy thin battered crust. YUM!
Garlic Fried Shrimp
The shrimp were fresh, crunchy and sweet and the garlic bits accompanied the whole dish really well. I love it!

Quite a hefty portion but the bread had a divine texture. It's a mix between bouncy and tender, with a perfect amount of luxurious sauce to go along with while not being overly sweet. Delightful
