Besides the classic lotus paste with salted yolk, Amara Singapore is also launching one with cempedek paste. Rest assured that this isn't too quirky, because the cempedek paste was light, so it was still primarily a lotus paste mooncake with cempedek flavour.

If you’re dining at Silk Road, it’s a sin to leave without trying their famous Sichuan Style Wok-fried Chicken with Dried Red Chilli 辣子鸡 ($38++). 🤩🤩🤩

You’ve been warned – this is not for the fainthearted. The level of spice was akin to 中辣 of Mala Xiang Guo, inherited from the plenty of dried chilli used. 🔥🔥🔥 While this is something that not everyone can handle, I must say that the flavours grew on me and I found myself reaching for more chicken chunks despite the slightly burning sensation that lingered. 🤤

This is just the magic of spice/mala right? 🤣 It’s almost impossible to enjoy this without breaking into a sweat or go “oooh ahhhh” with that numb tongue that you can hardly feel, but it is just so SHIOK! 😋😋😋 Perhaps we all do like this kind of self-torture sometimes! 👍🏻

These are the standards that I would expect from Amara. Thin skin that wraps the fillings perfectly. Fillings are the mixture of pork, prawns and chives. Dumplings also symbolizes wealth as they resembles golden or silver ingots. Get ready to HUAT at the Lunar New Year ala-carte or set menu at Silk Road until 19 February.

Peking DUCK is quite a rare delicacy that is only served at celebratory dinners and I was stoked to try Amara’s rendition (吉星高照 传统北京烤鸭), which is also available on Silk Road’s a la carte menu at $68++. 🤩🤩🤩

Seriously, who can resist this treat! 💕 Featuring a hearty slice of succulent duck meat encased in a thin rice flour crepe with crunchy leek & cucumber, slathered with some savoury-sweet hoisin sauce, this was indeed tantalising! 👍🏻

The star has got to be the duck meat with that perfectly crisp skin and fats beneath that melts in your mouth instantaneously. 😋😋😋 That being said, the meat remained moist & tender, evidence of great execution when roasting! Just look at that perfect golden-brown skin glistening under the light 😍 – are you salivating yet? Cuz I am! 🤤

Symbolising an abundance of everything good in the new year, Soy Baked Sea Perch with Spinach in Bonito Sauce (年年有余 日式焗鲈鱼) has got to be my favourite dish on Amara’s CNY A Propitious Reunion menu! 💕

Belonging to the same family as cod fish, I absolutely love how the sea perch has that iconic flaky & tender texture of the fish meat but slightly less oily than cod fish, which makes it less surfeiting. 👍🏻👍🏻👍🏻 According to Executive Chef Charles Goh, this characteristic also allows the fish to absorb the flavours of the sauce better while retaining its firm texture, & he is absolutely right on that! ✔

As a fan of Japanese cuisine, the intense bonito taste which imparts a rich seafood taste really appealed to me, which I felt was extremely complementary to the fish. 😋😋😋 If you’re a fan of seafood, this dish would be your thing! Paired with a bed of nicely-blanched spinach & topped with fresh cherry tomatoes & edamame, this sure was the highlight of my meal. 🤤

Being a non-heat lover, I would appreciate their tender Soy Baked Sea Perch with Spinach and Bonito Sauce. Don’t forget to warm your stomach with a bowl of Braised Pumpkin Soup with Superior Fish Maw. .
