• Flavour of the pork-based tonkotsu soup was absolutely smashing – savoury, milky rich with a smooth consistency
• Texture of the house-made noodles was springy & firm to the bite
• The spicy kick from Ichiran's original red pepper sauce complemented the rich broth perfectly.
• The sliced pork was well-marinated and had a good amount of fat.
• All elements are customisable – flavour strength and richness of the broth, amount of red sauce, texture of the noodles, as well as other add-ons.
Has anyone eaten it in both Japan and Hong Kong? Is there any difference in terms of taste?

Apparently a really good ramen chain from Japan, this was certainly quite impressive. The restaurant is designed quite uniquely, so everyone sits in a single cubicle facing inwards to eat their ramen. You start off with a basic price, and get to customise your flavour, add-ons, quantity etc. by filling up the order sheet. I think what's good about this system is that you can decide how 'gao' you want your broth to be, as well as the consistency of your noodles. Nevertheless, while this was good, I felt that you could get similar stuff in Singapore so it wasn't particularly mind blowing.
My friend recommend this, & I must say it's superb!
The Tonkutsu soup base is super light, & the signature red sauce isn't really that spicy, even when I got it at x2 level. :/ however, It's so tasty that you will finish them with a 2nd serving of noodle. Sadly, the soup isn't refillable :(
The ramen cost 89HKD, comes with the standard selection such as noodles, soup base, char siew (yes/no), serving of signature sauce (>3x will have dry chili pepper, additional of 12HKD >10x), spring onion (yes, no, with leek).
The other toppings are at additional charges 12-14HKD.
Tips: I would recommend additional soft boil salted egg & seaweed. The salted egg isn't salty at all, it taste like hanjuku eggs, but with the flowy egg yolks 😍😍 The seaweed melts when added into the soup (unlike those that stays chunky & hard to chew), adding extra flavor to the soup!
Waited at least an hour, due to it's popularity + lunch time, & it's single seat, over the counter serving concept. Anyway a new outlet had just opened in TST on 6th June 2015! You can avoid the waiting if you pick the right time to visit :)
I'm totally regretting for not buying their home cook packets 😭 please bring this ramen to Singapore!
Finally got to try the famed ramen joint from Japan. Either we were in luck or the hype has died down, the waiting time was surprisingly short. Try reducing the red pepper if you are not a fan of peppery ramen soup base.
Here at the first outlet out of Japan. However, I find Japan's Ichiran tasted better than Hong Kong's.
No doubt, still the best ramen tasted till date. 🍜 Ichiran opened their first international store in Hong Kong, much nearer to us now ✌️

I started to queue at around 1715 then got served with my ramen after approx one hour.

The ramen was definitely worth the wait! Love the soup - it's light with a bit of hot secret spices. The texture of the ramen was just right too :3
Really Strong favor of the soup ... So yummy ... Plus .. Lucky us no need to take too long for waiting..

Must have been the 'regular' preference selected for the flavor strength, richness, garlic, and amount of red sauce. Mistake, the wow factor was lacking - it tasted like any ordinary tonkotsu ramen, bland but edible.
On the second visit more sober (you see, Ichiran is a place you visit at 4am, any other time do expect an hour-long queue), I decided to get my adrenaline pumped by indicating strong on every ramen preference. Result: a spicy, oily, creamy and sinful broth that packed a punch and every drop in that bowl secured a slot in my satisfied tummy. Now, I'm sold.
