Essentially the slightly more elegant cousin (but still undeniable doppelgänger) of Myojo Ramen Char Mee 100. It probably carries a Longchamp bag to the gym. Man, did my mouth feel itchy for meat of some kind afterwards. 3.75/5

$18 a serving. Angel hair pasta with Tamago fukike, lobster essence, rayu oil. Looks simple but tastes yummy good.

Someone's fork tripped it and it all fell into place. Plating has never been easier! Haha.... Sous vide for 24 hours, with brown rice, sake, mirin etc, I love it and want to replicate it at home. Hahaha....

So ahem, I am having "Angel Hair Wakame" now. Served with Rayu Oil, lobster essence and tamago fukikake. I can eat 2 plates of this.

Thin slices of eggplant given a crunchy coat of breadcrumbs to contrast against their filling of soft spinach with tomato fondue. Another of my favourite dishes here, and a delight for vegetarians!

Nuvo is predominantly an Italian restaurant with Japanese influences, so expect some interesting twists in the dishes here. What I love is Executive Chef Mark Richards' marriage of creativity and restraint so every dish I had here was tasty yet balanced - every ingredient has its purpose so there's no mess of clashing flavours. My top recommendation is this dish of perfectly al dente grains of rice steeped in lobster bisque and mixed with fresh, crunchy chunks of lobster and edamame. So flavourful with just the right bite.

Green Tea Pan Di Spagna. Dense, moist matcha sponge cake topped with banana cream and jam, and chocolate HELLO PANDA crumble. Cute and delicious!

Wild Honey Panna Cotta. Wobbly pudding flecked with vanilla beans and given an interesting twist with crunchy pieces of dehydrated lychee, fig, and orange.

Grilled Pork Rack. Ultra-tender and cooked slightly pink in the middle, the pork is seasoned with yuzukosho (a slightly spicy Japanese seasoning of yuzu and salt) served on chewy fregola (semolina pasta). "Refined comfort food" would best describe this dish.

Baked Olive Black Cod. Love the sweetness of the caramelised cod with the saltiness of the light olive cream sauce. Crunchy shrimp, shimeji mushrooms and baby potatoes round up the dish - overall not extraordinary, but a dish well done.

Angel Hair Wakame. Oodles of al dente angelhair pasta slick with rayu (Japanese chilli oil), lobster essence and egg furikake. Would have loved it even more than I already do if they'd added more protein so it's not just a carby dish.

Eggplant Parmigiana. Like a mozzarella and spinach sandwich, but with crumbed eggplant in place of bread. Served with tomato fondue, this was one of my favourite dishes - warm, rustic, and comforting.

Salmon Crudo. Salmon sashimi dressed in olive oil and yuzu juice, and heaped with furikake, tobiko (blackened with squid ink), and slivers of crunchy green apple. So refreshing on the palette!

Warm Japanese Mushroom Salad. Spinach leaves, juicy shimeiji mushrooms, and fragrant shallots put together for a simple but delicious starter. Pine nuts were removed for a dining companion with a nuts allergy, but I imagine the salad would be even better with their sweet, musky flavour and crunch.
