Chef owner Andrew Ng was trained in French cuisine, and had been working in Western food establishments for more than a decade. His love for Japanese food and ramen, in particular, has brought him to merge his French culinary know-how with Japanese cooking techniques to create his ideal bowl of ramen.

the ramen rouge from @ramenatelier , a relatively new stall at @savourworldsg conveniently located beside kent ridge mrt station. the stall claims to use french culinary techniques in their cooking, hence i had high hopes for this dish.
essentially ramen cooked in a rich tomato soup (bisque, i forget this is french cooking), the dish is warm and comforting, especially with the rainy weather we are experiencing. the tomato flavour takes centrestage here, resulting in a tangy, umami-laden broth that tantalizes the tastebuds. mix in the ball of chili flakes and the gentle heat tingles the palate without scorching it. the curly, sapporo-styled curly noodles are cooked al-dente, with a firm bite. always a plus point. the requisite tamago and pork belly is decently flavoured, while beansprouts provide crunch.
At $13, can i just say that this dish is really worth it. for something similar at most other ramen chains one can expect to pay upward of $17-18. definitely coming back.

The thick and flavourful broth was fantastic! Requested for firmer noodles to my liking. The chashu cooked sous vide was really soft. Last but not least, a good flavored egg completed the dish.

Located at science park drive one, this place makes a good lunch location for the staff and students working and studying nearby.

A very decent bowl of ramen for a rainy day. Thick and hearty, herby tomato broth with a tinge of spiciness the soup faintly reminds me of a Minestrone soup. The chasiu is lightly seared and a melt-in-your mouth type of fatty, and the egg is soft boiled with the yolk thick and runny. Enjoyed the quiet and attentive service on a Saturday afternoon and would recommend if in the area :) S$13 per bowl.

so i went back to Ramen Atelier today for their 1-for-1 Ramen Noir ($14 nett for 2 bowls). the squid ink broth looks pretty cool i guess, but i felt that it otherwise tasted like a very ordinary bowl of miso based ramen. can't complain about their 3 slices of char siew as well as ramen egg though, which are both prepared sous-vide to perfection - the char siew is also blowtorch grilled to add to the flavour. perhaps the owners can consider adding truffle oil to the broth to give it more character; otherwise after a while it would probably taste just like any regular miso based ramen with a black coloured broth. still an insane value for $14 nett a bowl though. 4/5

Finally got to try the much talked about Ramen Atelier. basically it's a ramen shop with French influences cause their chef trained in France. you can check out Seth Lui's review here http://sethlui.com/ramen-atelier-singapore/ this is their spicy tomato, which is basically ramen in tomato bisque with shrimp chili. So their noodles are cooked al-dente by default, so do let them know if you prefer it soft (like me). Otherwise their soup was great - a creamy sourish tomato paste with a bit of spicyness. the 3 slices of char siew as well as the egg are prepared sous vide so the quality was great. for $13 nett a bowl, this is definitely one of the best value for money ramens in Singapore!

p.s. They are having 1 for 1 for their Ramen Noir (squid ink ramen, usual price $14 nett per bowl so will be only $7) today (1/10/17) 12pm - 8pm!
