From now to 30 September, the Crystal Jade Group of restaurant concepts will be paying homage to Singapore’s rich heritage with familiar specialities and reimagined classics. Over at Crystal Jade Golden Palace, get ready to be well pampered starting with the Abalone with Black Garlic Bak Kut Teh that is served in a teapot, a broth with so much depth in flavours you will drink every sip of it.
My parents love the next dish of Nanyang Fresh Rojak with Roasted Duck, which brings a new spin to the classic salad with an umami rich sauce. The Sautéed Squid and Petai is a dish calling out for a bowl of rice as both ingredients are elevated with the piquant homemade sambal. For our main, we got the Nyonya Fried Vermicelli Mee Siam with Assorted Seafood, the rice noodles having a wok hei aroma and coated evenly with the rempah. We ended with Durian Chendol in Coconut and I ❤️ SG Pudding.

Starting from 19 January, Crystal Jade Group of restaurants will launch the festive dishes and menus to usher in the Year of the Dragon. All casual and fine dining outlets will feature a unique lineup of dishes and set menus, and I had the opportunity to sneak preview them. Starting with the prosperity yu sheng that is available at all fine dining concepts, the traditional yu sheng is elevated with the addition of Boston lobster tail and aburi scallop. Crystal Jade Pavillion will be showcasing the double-boiled kampong chicken soup while the Hong Kong Kitchen team is presenting the pan-fried dace fish paste in Shunde style. Listed in the Michelin Guide, Crystal Jade Golden Palace is serving up a pan-fried South Africa abalone topped with crispy leek and a lava kumquat taro doughnut while Crystal Jade Palace is going festive with the premium loin rib coated with Cointreau orange sauce and a dessert of red bean roll with tangerine peel. The noodle specialist of Crystal Jade La Mian Xiao Long Bao has a dry la mian with prawn and celtuce, while diners can takeaway the eight treasures vegetable wrapped in beancurd skin that is so reminiscent of a pen cai.

We sample a few of their new dishes during the media tasting and I was thoroughly impressed with the flavours and presentation. Dishes that are available at Crystal Jade Golden Palace includes the starter of Teochew Four Delights ($58) whereby the order comes in a large platter filled with braised duck, chilled lobster crystal jelly that pays homage to pork trotter jelly, crispy crab roll and chilled mala jellyfish with Chinese yam in aged vinegar. All these small bites and refreshing flavours help to whet the appetite for the later dishes. This was followed up with the Pan-fried Red Grouper with Radish & Yellow Bean (seasonal price) that is prepared the Teochew style. The firm texture of the grouper gives it a nice bite, complemented with the umami sauce.
The subsequent dishes are available at Crystal Jade Palace such as the Superior Bird’s Nest with Fresh Crab Roe ($88) served with a side of Jinhua ham soup that is meant to be enjoyed separately. The richness from the bird’s nest and crab roe is balanced with the soul-comforting broth. Served tableside, the Braised Whole Thick Fish Maw ($78) is unlike any fish maw that you would have eaten elsewhere as this is top-quality fish maw that has a gelatinous mouthfeel cooked with spring onion and served with a thick braising liquid. The Sauteed Spare Ribs with Aged Black Vinegar & Lychee ($32) is an appetizing meat dish with the aged black vinegar bringing the tanginess to awaken the senses.
A unique dish is the Poached Cabbage in Porridge Water with Conpoy & Garlic ($26) with the porridge water being a thickener while the garlic brings another layer of flavour. The carbs for the day went to the Mee Pok ($28) that has been tossed in the homemade XO sauce and topped with crispy pork lardon and crackling pork belly, making it a fitting end to the meal before the dessert of Chilled Beancurd with Ginger Osmanthus Syrup ($8.80) with the addition of more candied ginger to give more antioxidants into the body.
