Their Johor bi tai mak that comes only in the soup version was already sold out before 10am on a weekday hence I settled for mushroom minced pork fishball and pork leg noodles.

Each bowl of noodles is tossed in black vinegar chilli mixture, topped with flavourful well-seasoned minced meat with mushroom and pork lard. The minced meat and mushroom were well braised till soft and fragrant, making every mouthful slurp-worthy.

This stall gained its popularity for this unique dish, which is very rare in Singapore.

They called it the mouse noodles in Chinese, which is the silver needle kind of rice noodles. Soaked in a comforting warm broth.

A combination of hei bee, marinated minced pork, mushroom, fried shallot and fried garlic. The broth is very tasty with all the ingredients inside.

Arrived at 10.30am to try their much vaunted Johor Bi Tai Mak but it was sold out. So I settled for their Fishball Pork Minced Dry Noodle and added $1 for two pieces of pork trotters.

The Bi Tai Mak is really different. There is a chewy quality not found in your average stall. The pork trotters was a good decision. They were more meaty than fat and collagen packed. These are not your vinegar ginger type but those braised in peanut soup type.

I always add extra chilli and vinegar and this is one rare occasion I regretted my choice. Their chilli looks innocent and harmless but it packed a lot of heat. The umami fishball soup helped a lot.

Must come back soon, this time earlier to try their Johor Bi Tai Mak!

We ordered dry and soup, all of us prefer dry than soup. The soup one too starchy the consistency for us.

At Shu Heng Bi Tai Mak, there is always a long snacking queue for their unique noodle dish that focuses mainly on mee tai mak. The two dishes that we have gotten to share is the gravy heavy Johor Bi Tai Mak ($4) and Mushroom Pork Mince Noodle ($4). The former was way too starchy for us and tasted too heavy on the MSG while it can be comforting on certain days, we very much preferred the dry version that is tossed in a black vinegar chilli mixture, topped with braised minced meat. The tangy, spicy and savoury combination of flavours triumph the starchy version.

A new gem in Kebun Bahru Food Market! Not usually a big fan of bi tai mak (老鼠粉) but ordered this nonetheless since the stall name is that 😂 We tried both dry mushroom minced pork and soup (Johor bi tai mak) version and the dry one is a winner for us. The dry bowl comes with generous amount of minced meat, fishball and fishcakes. Give it a good toss, and you can taste the mix of sweet, savoury and tangy kicks from their in-house sauce and chilli. The minced meat is leaning more towards the sweet notes- different than most minced meat noodle stalls’ rendition- but I find it a refreshing change. There’s a constant line of people for this stall, so be prepared to wait for a bit!
