Poke the egg to reveal the golden, runny yolk. Watch it seep into the mushrooms & mash. #eggporn
Mix everything together and eat! Good for sharing as an appetizer.

$19. 62 degree egg, truffle mash, mushrooms and prosciutto with sourdough. Enjoyable but not mindblowing. Enjoyed the truffle but the dish was pretty one-dimensional.

Not to be missed is their 62degrees egg. It's an explosion of the earthy flavors of wild mushroom, that ended with the perfect aroma of fresh truffles slices. I really wanted the whole plate to myself.
Coming close is their popular lobster croissant item. Flaky buttery pastry - a perfect combi with the lobster chunks. The truffle honey vinaigrette served alongside was ♡ too.

My order, the 62 Degree Egg, suits my palate well with all my favourite ingredients on a plate. Think of truffle mash potato hidden beneath gazillions sautéed wild mushrooms with 4 small slices of prosciutto di parma (love this!) and little edible flowers that beautify the taste and look respectively. I love how the chicken jus and truffle are not overpowering the entire dish in flavour, though sadly my sourdough was over-toasted. A healthy-looking-and-tasting dish that surprised me indeed.

Eggs, mushroom and potato are some of my favorite ingredients on my breakfast plate and Bridge have them altogether on the 62' Eggs ($19)! A bed of truffle mash topped with generous toppings of sautéed wild mushrooms, prosciutto di Parma, chicken jus and seasonal truffles. This was appropriately naturally seasoned with the well use of Parma ham. The molten egg yolk adds a smooth and velvety texture to the entire dish. Definitely a crowd pleaser!

As promised, here's the #yolkporn and truffle porn from yesterday's 62 degree egg dish from @bridge.sg!

I know the egg was not very prominent in that picture. So.. HERE'S THE EGG. It's still a little blurry because my camera just keeps switching focus on its own. Enjoy!

P.S. Posting later at night because I suppose you all are finally at home WITH WIFI and browsing your phone before going to bed.

My favorite dish this afternoon and.... Of course, I've got a video of the EGG PORN. SHOULD I POST IT? OMG. Hahaha! Get your white truffle fix at Bridge! Ummmmm skip the coffee if you can though. Blearghhhhh.

During our first round of tasting for the weekend brunch menu, we were given the Pumpkinoa ($16), a vegan dish consisting of organic quinoa, carrot vinaigrette and roasted rosemary pumpkin; A-S-S ($20), an avocado scramble served on a sourdough with smoked salmon; The Lobster ($36), pretty self-explanatory with huge chunks of lobster meat, scrambled eggs on croissant, and the 62 Degree Celsius Egg ($19), served with sous vide egg, sautéed wild mushrooms and truffle mash potato. All in all, an eclectic range of items that targets to change the landscape of typical cafe-esque food, now made more refined and healthier. This was a tasting hosted by @bridge.sg and many thanks to @geekyelephant for the invite.

More please!!! I'm massively craving for this plate of sous vide egg hidden under a beautiful trove of sautéed wild mushrooms, seasonal truffles, prosciutto di parma and truffle mash potatoes. The crunchiness of mushrooms came together perfectly with the silky smooth truffle mash! Hearty yet healthy, I could do this every morning!

Special thanks to Bridge Cafe for hosting us and Eleanor for the invitation.
