Many years haven't eat this. I always suggest to order dry beef noodle, so you get both the sauce and the soup. Here though, the soup is so good I should order the soup version. The balls were good but slightly small. The sliced beef was intentionally undercooked - it's a good idea, but some slices were rubbery, so it takes skill.

Good traditional Hainanese Beef Noodles. Soup is not your average clear beef broth but thickened and yet not starchy. Lots of beef flavour. Good chilli sauce provided. Suggest you add some into your noodles if you are into spicy food and keep a small saucer for dipping.

Hai Nan Xing Zhou Beef Noodles is definitely one of the stars of Kim Keat Palm Hawker Centre and many websites would recommend this as a must-try if you dine here. We were bigger fans of the dry beef noodles and hence, we decided to order the dry version, which costs only $5 if you want only beef slices. The prices will be slightly higher if you want to add other items, such as beef balls or tendons.

We felt that the most unique feature of the beef noodles here would be the gravy, which is generally sweet but has a slightly salty taste to it. Perhaps the broth was prepared with a little bit of 咸菜? Squeeze some of the lime to add a slight sourish tinge to the broth and it's definitely going to be one of the most distinct bowls of beef noodles you ever had. Beef slices were generous and they were cooked nicely, as they were not overly tough to chew.

We visited the hawker centre on a weekday afternoon and were decently pleased to find that there wasn't a queue at the stall.

For nearly 70 years, this stall has been drawing queues for their excellent Chinese Hainanese rendition of beef noodles.

Their signature gloopy thick gravy has a distinct sweet savoury salty meaty flavour, with the gravy simmered for hours. Contrast the richness with a splash of lime juice and crunchy pickled mustard greens, lending a zesty tangy sour vegetal note.

The beef is thinly sliced and blanched quickly, resulting in a springy chew to texture. The natural freshness of the beef shines with meaty sweet savoury flavour.

The tripe has a satisfying chew, while the silky thick bee hoon / rice vermicelli noodles picks up the gravy well. The chili is also fairly punchy, which I love mixing in. Expect queues averaging 20 minutes.

The soup is light and flavoured,with generous ingredients.
The tendon quite tender, the beefball is nice too.
