1 dish that never fails to make me happy is a good bowl of minced meat noodles and Fa Ji is one of those that I crave for.
Their $5.50 bowl comes generous with quite a few ingredients, but the stars of the show were really the noodles and their chilli sauce. The noodles were very springy and they were will coated with their chilli sauce, which is very much on the savoury side as compared to the usual vinegary tangy kind. The pork lard intensified the umami, and they were satisfyingly crispy!
Definitely will be back again. Lovely!
Several things stand out in their rendition.

The gravy, slick with pork lard, light soy sauce, black vinegar, and chili, coats the soft mee pok / wide flat egg noodles well, lending robust savoury salty spicy flavour.

The tender soy braised shiitake mushrooms, juicy and vegetal salty earthy savoury in taste.

The bouncy fish balls and springy fish cake have a light savoury sweet flavour with a hint of vegetal fishy notes, yum.

Bits of tender minced pork with meaty sweet savoury flavour, and crisp spring onions with vegetal herbal sweet notes, complete the dish.

If there's an identity to the overall meh Kovan hawker centre, it's the bcm rivalry. I rarely join the queues but I know they're all quite good. Compared to bcm elsewhere, here they're generously seasoned. The portion of the noodles was also huge.
Noodles texture cooked just right, retaining it's springy texture for a good bite. Comes with a good portion of ingredients such as minced pork, liver, fishball, fish cake, meat ball and braised mushroom. Their sauce includes their fiery chili but carries a hint of sweetness and the amount of vinegar used is not too overpowering.
The Bak Chor Mee ($4) from Fa Ji Minced Meat Fishball Noodles at Kovan Market and Food Centre (#01-05) features springy egg noodles, fishballs, minced meat, pork liver and mushroom tossed in a delicious chilli sauce - pretty good stuff! The portion is quite generous too - there is usually a queue but it is worth the wait:)

Store have been serving delicious noodles for over a decade and is still keeping up their standard.
Expect to queue for atleast 10mins anytime of the day.
Although they are famous for their bar chor mee (minced meat noodles), their curry noodles is also really nice. Served together with tender steamed white chicken meats and fish cake, along with thick curry soup that's not too salty non oily.
Eta: the amount of fried pork lard is awesome!

1 out of the 3 stalls selling minced meat noodles at Kovan 209 hawker centre, each of which has its own queue. Other than the generous amount of ingredients such as minced meat, fish balls, fish cake slices, mushroom slices, meat ball, pork lard, the sauce that the noodles were tossed in was heavily flavored and filled about a quarter of the bowl. Their chili has quite a bit of spicy kick. However, the noodles was a little tough and the overall taste was only average, probably not worth spending time on queuing.
I prefer less saucy BCMs, but if you’re a fan, you’d probably like Fa Ji’s. Didn’t quite like their fishballs and peppery soup, but the thickly sliced mushrooms were braised nicely and livers were tender. The noodles were tossed in a mix that leaned towards more sweet.
The noodles were not overcooked and retained a pretty good bite. They were tossed in an addictive sauce that’s heavily perfumed with lard and loaded with fiery chilli that carried a hint of sweetness.

With numerous stalls here selling curry noodles, my go-to one would be this stall and I would usually order a duo of bee hoon and yellow noodles with an additional portion of steamed chicken meat. The combination of the rice vermicelli, yellow noodles and tofu puffs are able to soak up the lemak curry perfectly. Add in a spoonful of additional sambal chilli and a dash of laksa leaves, mix them well and you’ll get a bowlful of comfort.

P.S. there’s a secret noodle dish called ‘Anything Noodle’ which is a tangy spicy noodles that is only available when Chef Dominic is there to cook. It has all the items of a minced meat and fishball noodles, all in a bowl!

This is a dish I hardly order because I don't really enjoy the blend white chicken taste. Having said that I found the curry noodles broth to be really delicious. Having it with the broth, the blend chicken meat comes alive with flavour and goes very well with the fat yellow noodles. Definitely a nice dinner treat.
Super generous portion of ba chor mee for only $3.50! Loaded w different ingredients: springy noodles, minced meat, mushrooms, sliced fish cakes, 4 types of assorted fish & meat balls & liver slices! The soup is packed w sweet flavors from the generous ingredients & is best consumed w sliced red chilli! ❤️❤️ Perfect for that wet, chilly morning breakfast :) A tummy warming bowl of noodles that's not only delicious but majorly wallet friendly!
Priced at $3.50/$4.50 a bowl, this place manage to retain a strong queue with their Minced Meat Noodle, which not only taste nice, but presented nicely as well! The Dry Minced Meat Noodles Mee Pok ($3.50) is not overly dry and the sauces added balance off! Ingredients are aplenty for this bowl and the mee pok is also very springy as well!
One of the things you will notice when you visit the market and hawker centre at Kovan is that most of the stalls selling bar chor mee or fishball noodles have snaking queues. I was lucky enough to be able purchase my bowl of bcm from Fa Ji when there were only 3 people in the queue. The noodles were done just right and it was flavourful to say the least. Despite having asked for more chilli and vinegar, I still found that my bowl of bcm was slightly lacking in those two aspects. My overall conclusion was that while Fa Ji served a decent bowl of bcm, it wouldn't be something I would queue for. Also, the 3 people in front of me placed orders for Laksa instead of bcm, so maybe I'll try that the next time round. A special shoutout to the friendly Auntie who was taking orders, you seldom get service standards like that nowadays.
