Amazing taste and its really a must eat when you come to Singapore.

Went at 10pm and there was no queue. They sat us in a cosy corner away from the larger groups perhaps because we were 2 pax.

Mala was a bit too spicy even at low spice for us. We did order the chicken soup base so we mixed the two to make it more tolerable.

These are the signatures ordered and liked:
1.) Pork Meatballs
2.) Prawn Paste
3.) Black Pork
4.) Signature Beef
5.) Noodles

Other items:
1.) Chinese Cabbage
2.) Golden Mushroom
3.) Fried Tofu Skin
4.) Quail Egg

Pig Stomach and Chicken Soup Base
Selected pork tripe and chicken boiled by slow heat. It is creamy white and rich in flavour.

Si Chuan Spicy Soup Base
Fried with vegetable oil, spicy flavour, delicious but not greasy. Selected Sichuan pepper, pepper and spices raw materials are served to make real Sichuan hot pot with a process of traditional watercress fermentation. It is featured by a bright red colour soup base with spicy and rich flavour.

Tomato Soup Base
A must-have when dining at HDL. Selected tomatoes that have enjoyed abundant sunshine are made into sauce. The sauce is then fried to make the tomato soup base. 

Bai-Yu Soup Base
This is made with a fine selection of chicken, pork and fish bones, this flavourful soup brings you the perfect balance of taste with the most ordinary ingredients.

This is perfect for the undecided, with a fresh, healthy medley of crisp crunchy vegetables.

Includes crown daisy, spinach, cabbage, black fungus / wood ear fungus, and golden mushrooms. We added shiitake mushrooms, and oyster mushrooms. All these lend lovely vegetal earthy sweet flavour.
