To mark the Mid-Autumn Festival, Jade at The Fullerton Hotel Singapore @fullertonhotelsg has introduced the 'Mid-Autumn Treasures' five-course set menu (priced at S$138++ per person, inclusive of a complimentary glass of wine). This special menu will be offered from 1 to 30 Sept 2023.
Enjoy a heartwarming Double-boiled Superior Broth brimming with an array of exquisite ingredients like Winter Melon stuffed with Dried Scallop, Chinese Ham and Crab Meat. A comforting and flavorful start to a meal, with a balance of textures and tastes that showcase the culinary artistry behind this dish.

We tried most of their dim sum selection and my favourites are Bak Kut Teh Xiao Long Bao, Deep-Fried Thousand Layers Radish Pastry and Pan-fried Singapore-style Chilli Crab Meat Bun.
Luxurious log cake that had decadent layers of chocolate within each slice of this cake. The blackcurrent in the middle with a jam like texture injected a tinge of sourness which neutralise the sweetness from the chocolate. Overall, the chocolate was rich, of great quality, and not to sweet at all. Simple but great dessert to end off a festive meal!

Fullerton have rolled out festive treats such as three new festive log cakes - Japanese Marukyu Matcha Yuzu Log Cake, Mango Medley Yule Log Cake and Vanilla Mont Blanc Yule Log Cake ($75 each).
Featuring the Mont Blanc which boast a luscious composition of vanilla creme chantilly, vanilla praline and candied sabaton chestnut. Itβs surprisingly light and even after finishing a slice, leave you wanting more.
Take a bite of the airy classic fruity panettone filled with raisins, candied orange and lemon. This year they have also introduced the Strawberry Panettone, studded with tangy dried strawberry for a pop of flavour and colour. Comes mini-me size panettoncino too!

This was quite unique. They served it to you with the crispy rice and crab on the top, and pour the chicken broth on the spot for the crispiness to be retained as much as possible. The chicken broth tasted like it was cooked for a few hours, as you can taste there are many ingredients added to it. I absolutely love crispy rice with broth as itβs not common to have a crunchy texture while drinking broth. It also looks really aesthetically pleasing with the crab-shaped salt decoration on the plate. However, this dish was a little salty, even before adding in the crab-shaped Himalayan salt. The crab was soft and tender, but there wasnβt much taste to it.

This wagyu beef made me speechless. I have never had such a tender beef before (not counting those higher grade beef). This beef really just melts in your mouth the moment you take a bite. It was also seasoned in such a way where the beef doesnβt get too salty, but it is still full of flavour. The mushrooms were sweet and well-cooked. I also really appreciate that it does not taste earthy and raw.

I have never had anything like this. They made it similar to a kueh pie tee, which is a famous Peranakan tart filled with prawns and vegetables. This felt like I was eating ε€θ (minced pork) as it was really tender and was braised with a sauce that made this so flavourful. 1 tart was definitely not enough for meπ

Pairing orange peel with Peking Duck was pretty interesting! It gives a fruity and tangy flavour to the smoky roasted duck. I usually donβt like eating duck, but they sliced it really thin, hence it did not feel very dry. The wrap was not really good as it felt powdery and a little too thick. Nevertheless, the crispy duck skin and orange peel made this a pleasant meal to start the dinner.

This is part of the βJoyousβ set menu ($98++ per pax) and is the best item in the menu. The ice shaving is refreshing with the sweetness of pineapple. The champagne jelly is an interesting touch. Even my mom who doesnβt take alcohol enjoyed it and joked if she could ask for more π
Booked a staycation at The Fullerton Hotel and decided to give Jade a try using our SGD120 dining credits π The staff recommended for us to choose the Joyous set menu ($98++ per pax) as itβs βworth itβ with the Boston Lobster noodles. We thought itβs a good idea but when we were tucking in, our joy turned into dismay as we realised the lobsters served that day were not freshβΌοΈ The lobster meat was stuck on the shell and not succulent at all. It was very disappointing as we chose the pricier set menu just to try the lobster. Didnβt quite enjoy 2 other dishes in the set too. I think the best dish in this set is the dessert, so hereβs a lesson learnt - donβt go there for the mains π’
Housed in fullerton hotel, afternoon dimsum and tea offered some exquisite picks from abalone skew mai, unagi on crispy rice, honey iberico siew mai, lobster porridge, black bean beef horfun, and one of the fanciest goes to poached pear and beef dumpling. Some of my favourites goes to: coffee pork ribs & bak ku teh xiao long bao!
A creative menu, and thankful for an afternoon of fun and laughter here
We didnβt realise that this was a Michelin star restaurant until after we left the place and damn, it really lived up to itβs star. Food was phenomenal, perfectly executed. Especially loved the sea bass which was outrageously plump and tender. Love love loved the mango pomelo sago as well.
This is one of Jade Signatures in the current Fullerton takeaway menu. But from tomorrow onwards, in conjunction with the launch of "Dine at Home with Fullerton", there'll be more extensive selection of signature dishes from Jade restaurant and specials from The Fullerton Hotel.

Pictured is Jade Signature Boston Lobster, served with X.O. Chilli Sauce, Egg Noodles and Stir-Fried Seasonal Vegetables. The sautΓ©ed lobster remained succulent, while the egg noodles travelled well and was coated in a delectable savoury sauce, making this a winner both in terms of texture and flavour. Even the mushrooms were velvety smooth, and vegetables retaining a good crunch. All three of us gave this bento set a thumbs up.

We think this might be a βdeconstructedβ version of spring roll. Taste like spring roll but look as if ready to launch into stratosphere π
It has crispy exterior with beansprout, carrots, vermicelli fillings. How interesting! π―
