Welcome back, @hambaobao, with your permanent house now at TRIO! The 2-week old, 30-seater casual eatery features their 5 original signature burgers, in an industrial-themed space decked with navy green furniture and flooring, as well as its nostalgic white wall tiles. Customers can either choose to dine at the bar counter or right beside the floor-to-ceiling windows, where you can enjoy a magnificent view of the shophouses around.
I had only one thing in my mind as I bit into the crispy pork belly burger; the burger that I would die for. While we waited for about half an hour, I must say it was definitely worth it! Every single bite returned with constant crackling of the crispy roasted pork skin and I am really not exaggerating (because I took extra note π). This mini tower was fully packed with thick chunks of pork belly, Japanese cucumber, dressed in mustard and hoisin sauce. You know how generous they are with the meat when the cuts of pork belly almost dropped off every single time you try to adjust the burger to get a good photography angle. The choice of hoi sin sauce as a complementary dressing was perfect to enhance the Asian flavour, but whatβs more brilliant was the touch of English mustard to cut oiliness and sweetness of the hoi sin which could get jelak. Buns were really pillowy and buttery, canβt ask for more.
We were pretty impressed by the golden brown hand-cut fries ($2.50) too, slightly thicker cut but fried till extremely crispy. The seasoning was tasty and I enjoyed them with the potato skin on.

Finally got the chance to try the burger from @hambaobao! Went there on a weekday afternoon, just before they open and managed to avoid the snaking queue which followed after.
Generous chunks of crispy Siow Bak with english mustard, hoisin sauce (reminds me of Peking duck!!) and cucumber sandwiched between two soft, buttery buns. Also added the Hand-Cut Fries for just $2.50. The kinda burger we never knew we needed. Love it!
And in wake of its impending closure, the queueing time has exploded into a staggering 1hour++.

This π°πΏπΆππ½π π½πΌπΏπΈ π―π²πΉπΉπ π―ππΏπ΄π²πΏ ($5.50) contained generous chunks of crackling sio bak that sported plenty of fatty meat (perhaps not quite melt-in-your-mouth) β surprisingly good for a burger stall. The mustard's sharpness also blended well with the savoury-sweet sauce, creating a good counterpoint to the heaviness of the sio bak.

Always liked their solid burgers, especially with the affordable price tag, they'll be missed. (Hopefully they reopen somewhere)

Finally got around to trying this burger! For the days when you know you can afford to be a little bit more sinful, this burger is meant for you. The pork belly was done nicely with the crispy skin and yet the juicy and tender meat instead, paired nicely with the english mustard sauce. One bite into it and it left me craving for another.
PSA. Please be prepared to defend your food against pigeons.
I have been this place three times but it was the first time I got to try this one. The pork belly is soooo crispy (crrrrrrrrrrrrruunchhhh) ππ The only downside of this burger is obviously its calories π·
