The iconic Duck Neck and Foie Gras Sausage from Pollen at Gardens by the Bay! This was made from stuffings of duck leg, pork and cubes of foie gras into the neck of a duck.

The entire neck is presented before being cut into generous portions. Best part of this was the skin, which was so thin and caramelised just nicely. Same goes for the 15-day dry aged duck breast on the side, beautifully thin skin that wasn’t fatty at all and the meat contained an intense duck gamey flavour which I love.

Truffle game strong at @pollenrestaurantsg !! I loved their dishes which highlighted different truffles of the season, wonderfully paired with the Chef’s creations.

This other truffle dish used the highly prized white truffle, which is only harvested once a year! Shaved generously on top of a bed of egg, polenta and chicken jus. This dish came out quite filling, but the fragrance of the white truffles shined right through so elegantly. What a special experience to be able to try such valuable ingredients 🙏🏼😌

All part of the tasting menu ($168++) at Pollen Restaurant, beautifully located inside the Flower Dome of Gardens by the Bay. The white truffles were seasonal and were added as a top up, do ask which is in season now 😉

Truffle game strong at @pollenrestaurantsg !! I loved their dishes which highlighted different truffles of the season, wonderfully paired with the Chef’s creations.

My favourite dish at Pollen, the Wild Mushroom Tart, was an exciting combination of flavours with the caramelised celeriac, vinegared chanterelle and umbrian autumn truffles. Each element contributed a distinct flavour, some new, some familiar, resulting in a vibrant and yet earthy flavour that was so unique to me!!

All part of the tasting menu ($168++) at Pollen Restaurant, beautifully located inside the Flower Dome of Gardens by the Bay.

This is so delicious, yet so comforting. It's definitely not your usual sausage, as the duck neck was first hollowed out before filling it with dry-aged duck breast and other ingredients, making it a savory, meaty, and funky with the aroma of foie gras.

The taste was surprisingly good, but it's from Pollen Restaurant after all. This is a beautiful restaurant serving artful European food at Gardens by the Bay, and they've just welcomed Chef Michael to helm the kitchen.

Besides this, I also had the Beef Wellington, where an Australian beef tenderloin with pink medium rare centre was encased in a buttery flaky pastry; a classic lasagne with smooth layers of pasta and satisfying ragu; and some whole cakes to complete an already outstanding meal. These comforting English classics is certainly more than enough to make up a dining in experience of their Chef’s Menu at $148++, sans the beautiful view from their restaurant.

Perhaps not quite as textbook photogenic but delivering tastiness in spades was the belly-warming Confit Duck Leg Cassoulet, the main course in the other Set Meal I received. Those who prefer blander flavours might find the duck meat a tad salty but I enjoyed every bit of it. The dessert in this case was a supremely elegant Valrhona Chocolate Tart. Bitter and dark, it exuded a sophisticated “adult” vibe which made it all the more desirable.

A surprise delivery came my way last evening from Executive @chefwilsonsingapore and his team at Pollen Restaurant. Just in time for dinner too.
My curiousity about Chef Wilson’s food had been piqued back in February when I read about him joining Pollen. After all, he was instrumental in securing a Michelin Star for the last restaurant he headed - the PHÉNIX and The Puli Hotel and Spa in Shanghai. Although my plans to dine at Pollen has had to be put on hold, I am grateful for the opportunity to try a couple of the Set Meals in the new Takeaway menu Chef Wilson has developed.
Without a doubt, the dish that floored us all last night was the Beef Wellington. What a magnificent construct of buttery puff pastry, tender, juicy Australian tenderloin and mushroom duxelle. The accompanying Russet potato puree and pink peppercorn sauce only enhanced the deliciousness of the spectacular pie (by the way, detailed heating instructions are attached, so no worries if you plan on consuming the food later). Included in the Beef Wellington Set Meal ($108, serves 2 or even 3) was a large Lemon Meringue Tart (14cm in diameter). This zesty and luscious number sure hit the spot after that rich main.

This beautiful restaurant serving artful European food at Gardens by the Bay has just welcomed Chef Michael to helm the kitchen. I would have been dining in, but Circuit Breaker happened so I had their food for delivery instead.

It's very good. Instead of a fine dining Chef’s Menu at $148++ for dine in, they delivered me several classical English beloved comfort food. I had the Beef Wellington, where an Australian beef tenderloin with pink medium rare centre was encased in a buttery flaky pastry; a limited-quantity duck neck sausage casserole with dry-aged duck breast and fillings with the aroma of foie gras (more about this dish in another dedicated post); and a classic lasagne with smooth layers of pasta and satisfying ragu. They serve whole cakes as well, to complete the cozy and slow Saturday afternoon.

If Chef Michael can make these classics taste so good, I can only imagine where his creativity would take us on a gastronomic journey. Guess we need to wait till the end of Circuit Breaker to find out.

$38 per set // hidden within the lush flower dome of gardens by the bay lies fennel cafe, where i had an enjoyable tea time!! this set came with about 5 bite-sized savory and sweet items of a mediterranean-french theme, so each item was of unique flavors and not your typical afternoon tea menu.
all of the items were scrumptious and some of the items i enjoyed more due to its uniqueness were the mushroom croquette, red pepper hummus and sourdough chips, spiced creme catalan tart and citrus dark chocolate scone. due to each item being bite sized, i got to enjoy a wide variety of flavors without being too full, which left me feeling just right to go explore the flower dome after my meal!!
you’re entitled to enter the flower dome with the afternoon tea set so that made my meal more worth it!!
the quality and taste of the food definitely matched up to the great garden themed dining experience i had, and i’d sure to come back for more if they offer new seasonal menus 🌸🌸

This afternoon tea set only offered 1 cup of tea or coffee. If you wish for free flow, must add $5. I had this set a few months ago so the items may have changed.

Initially I was seated upstairs right next to the Flower Dome (complimentary entrance if dine at Pollen). But the roof was glass and the sun was super hot. Yes the ambience was great and the view superb, but I started sweating even before my food came. In the end, I requested to be seated downstairs. Air con!!!

Sweets platter:
1. Mojito choux
2. Macaron of the day
3. Rosemary honey choc cake
4. Raspberry and rose tart
5. Cranberry and pistachio financier

All were quite sweet but tasted good. Very small.

This was absolutely the best in the whole set. Deviled egg dip with vege chips. If they had this on menu I would order. Vege chips were so crispy and the egg dip was so creamy.

This was the savory plate:
1. olive swirls & smoked ricotta & plum
2. grilled sourdough & tomato & avocado & ham
3. smoked salmon & horseradish sandwich (one of which I asked for no salmon, so they gave cucumber slices)
4. Beef bitterballen
5. Chicken & mushroom tart

Loved 4&5 the best. The rest were quite average. And I don’t like ham.

$38++ per pax, includes tea or coffee. Top up $5++ for free flow coffee and tea or $12++ for Sangria.

Savouries were okay but the fried items were cold. The sweets weren't to my liking. Overall for the price and quality, do not think its worth it.

Mediterranean offerings with scones, macarons, lemon puffs and all sorts of sweet and savoury treats. I would go for the complimentary pass to flower dome, for the ambience. Enjoyable with a pot of tea or coffee of your choice! Very affordable at $38+/pax.

There is always something new in the Flower Dome. With Entertainer 1-for-1, it is worth a visit to dine at Pollen Terrace, followed by free access into the dome and enjoy the floral exhibits.

The beef cheek is extremely tender, complementing the risotto ($34++). Ordered a pot of Bavarian Mint tea ($8++), which also happens to be yellow in color. The dome is cool on the inside but the sun is shining in from the outside. Don't worry, it will still be a cooling dining experience.

It's extremely crowded on Sunday afternoons. Reservations highly recommended.

It was decent. Thought it will not be filling but I did feel full. I've had better high teas though. And this is non refillable as well.

Was a good dish overall, loved the sauce! However, the beef was slightly on the chewy/tough side, and i prefer cuts that are less tough.

$26 | Cheese were melted perfectly and taste amazing with the smoked ham and salmon. However as the place was a little chilly, the french fries gets soggy really quickly.

$24 | Though a simple dish, the addition of pumpkin puree gave the dish its robust flavour. The roasted cabbage was equally flavourful as well. A dish full of umami. However, as much as it is robust, the selection of ingredients made the risotto sweet. Maybe that’s why it is in a small portion otherwise it will get too cloying for the tastebuds.

Take the complimentary buggy from near the visitor Centre that will bring you to Pollen
The chicken took a long time to come, wish they’d give a heads up when we order. My table of other food all came except for this dish which took the longest.
Tastes good and most value for money among the dishes on the menu. You get a whole roasted chicken rubbed w nice spices. It’s also stuffed w some chickpeas and beans.
Used entertainer so it was 1-for-1, plus free entry to the flower dome!
