Loved the sweet herbal savoury boozy flavour of the Soup Base Hua Diao Chicken Soup, enhanced with Shaoxing rice wine, red dates, spring onions, wolfberries / goji berries, and ginger; carrying a milky white colour.

Staff marinated then flambéd pieces of chicken at the table, then placed it into the hot pot broth. Beyond creating exciting anticipation, this gave the Soup Base Hua Diao Chicken Soup its distinctive flavour.

The Soup Base Laksa is more straightforward spicy savoury salty, and less milky in taste, with the laksa leaves with chili lending a pronounced flavour, while the dried tofu beancurd puffs within soak up the gravy; carrying a fiery red orange colour.

Loved the variety of fresh vegetables in the buffet selection. Particularly loved the King Oyster Mushroom with its chewy tender texture and vegetal earthy savoury flavour, the soft Spinach with vegetal sweet flavour, and the crisp Tang O / Garland Chrysanthemum with its vegetal bitter herbal sweet flavour

The range of fresh meats from the buffet selection is above average in quality. Most are thinly sliced to enable quick cooking. Among them, I loved the tender succulent Beef for its fresh meaty savoury sweet flavour, and the chunky chewy Chicken which picked up the herbal sweet savoury notes of the broth.

Excited by the fresh seafood in the buffet selection. The prawns were a stand-out, juicy and succulent with bright meaty sweet savoury flavour, while the tender Mackeral Fish absorbed the broth to gain meaty sweet savoury salty flavour.

Hua diao phoenix is a hearty and creamy concotion of double boiled treasures chicken broth infused with chinese hua diao wine, herbs and spices that leaves a lingering sweetness.

Royal chrysanthemum chicken broth is a seasonal special that uses a range of chinese herbs and ingredients such as yu zhu (solomon’s seal), red dates, goji berries and dried chrysanthemum. This nourishing broth has subtle sweetness and scented with hints of floral aroma which will infuse into meat and vegetables to give a sweet-savoury aftertaste.

Double boiled treasure is a upgraded version of their usual chicken broth that uses chinese herbs like red dates and wolfberries and developed into a rich and robust flavoured chicken soup.

Not forgetting to try their famous homemade coca dipping sauce that contains coriander, thai sweet chili, fish sauce, sugar and a few other secret ingredients that turns into a sweet, spicy, rich and savoury sauce.

My favourite go to for steamboat. Despite it being in buffet style, the quality of food has always been good. The variety of food is awesome too.

Service from the staffs is good too :) Price is reasonable as well. About $42 per pax for lunch!

Sauces were in abundance. The table was very clean too. I did my sauce using Coca original sauce and added sesame paste, sesame oil and seeds, garlic, soy sauce, spring onion and fried shallots. Yummy!

I liked this garlic rice. There was another garlic fried rice under the premium buffet. I dunno what was the difference since this tasted like a fried rice to me.

Really enjoyed the fish paste, which resembled fish cakes when cooked. The server will help with the pastes so no hassle.

Got 50% off with eatigo app for a Sunday at 2pm. I chose the regular buffet. There was a premium one at $49++ before discount. Most dishes at 1 portion featured 4 pcs. Liked the beef and chicken which was thigh meat. But I wished the chicken thigh didn’t have skin. Had to remove it from almost every pc. The pastes were good too, esp the prawn and squid ones.

Check out the blazing chicken before it is added into the double boiled treasure chicken broth. Plus that bottle of Hua Diao Wine to enhance the aroma and taste.

Now this is something that is really off the menu, but as soon as you had enough of steamboat and are ready to take in some carbs to end off the meal, simply inform the staff that you would like a COCA Porridge.

What the staff will do next is to get some cooked rice (I suggest two persons to one bowl of rice), chopped spring onions and an egg, and the staff will cook the porridge, using the broth with all the essence from the steamboat, in your presence. For the next 10 to 15 minutes, watch how the rice transforms into some super-yummy porridge.

The safe option is always to choose to cook the porridge using the chicken soup, but if you are more adventurous and are willing to try something more exotic, go for the porridge in Tom Yum broth.

Quoting what the staff had told me, they are more than happy to prepare this at no extra charge, provided that they are not operating at high capacity.

"Lo Hei" is a mandatory affair for Chinese New Year celebrations in Singapore. And my steamboat reunion dinner at COCA is not complete without tossing a Salmon Yu Sheng (S$48.00, available 20 Jan - 13 Feb 2017) for a prosperous year ahead.

The unique thing about this dish is that fruits replace some of the traditional ingredients to present a refreshing yet still satisfying "salad". How does it taste like when Thai Chilli Sauce is used as one of the condiments? In summary, I like it!

Tip: Check with the staff on your privileges if you are a SAFRA member when you order this dish!

COCA is one of those established steamboat chains in Singapore that many steamboat lovers will know of. At S$43.80++ per adult during dinner time, customers can choose from a variety of seafood, meats, vegetables, house specials and staple foods (i.e. rice and noodles).
Usually, I will order their Fish Glue and Fortune Fishball as they contain much fish paste (probably Wolf Herring, better known as 西刀鱼?). I recently discovered that their raw jellyfish can also be very tasty if my blanching skills are good. There is also the thinly sliced beef and pork belly for those who like to eat them the shabu shabu way.
Which soup base taste better? Well, the chicken stock is really on the bland side, so I personally prefer the tom yum soup. Still, I will recommend going for a half-half, because more often than not the tom yum base will become too rich (watch for the sodium, people). Sometimes they will also have some drinks promotion, but I will just stick to iced water: cheaper and free-flow!

Roast Pork was very crispy but too huge a portion as appetizer. Seafood salad was a disappointment as the overall taste of this appetizer was not harmonized by the individual ingredients. Not appetizing at all 😒
For the steamboat soup base, we chose the clear chicken broth & tomyum. Ordered our all time favorite Fish Glue ($11), Chicken Meat Ball $11), Crab Stick ($5), Beef Fillet ($11), Fish Fillet ($11), Thinly Sliced Pork Shoulder ($15), Emperor Shitake ($8) & Golden Mushroom ($8) 😘

Not too sure if it's applicable to anyone else. But I doubt I'll return for it. Limited choices albeit being a buffet.
