The pork fats were very tender and indulgent without being overly gelat. Soup was quite decent, it's not super thick, almost like a shio base mix.
Noodles were super thin, not my kind of thing but definitely go with the hard as people rec because it cooks in the broth.
Char siu has bite but it's sliced thin enough to work well
I don't like the spicy paste. It's earthy like mushrooms (although it's not, seems like just beans). Not particularly good on its own and doesn't work well w the soup either.

Went for the special as it comes with more ingredients, including more slices of pork. I wouldn't go for the other versions of shiromaru as I feel the serving size at Ippudo is small and those would not be enough for me. I think Ippudo is most suited for those who love tonkatsu broth, but dont want it to be overly rich and creamy (like at Hakata Ikkousha).
However, at $21++, it is rather expensive for a bowl of ramen in Singapore.

💬 There are a lot of bias-ness surrounding IPPUDO as it is one of the more popular ramen chains around. It is a decent bowl of ramen, sure, but this particular branch lacks consistency. I have had disappointing experiences here before. That being said, their worst is still the minimum gauge of what I feel a standard tonkotsu ramen should taste like. Their Hakata-style noodles were on point with an easy-to-drink light pork bone broth. The pork slices however had no wow factor and tasted as it is. All in all, you cannot go wrong with IPPUDO!

This collab is known as LNX X 𝗜𝗣𝗣𝗨𝗗𝗢 and it will only be available for a short period of time from 17th to 23rd Dec 2020 at the 3 stores stated above.⠀

The ramen consists of 𝗜𝗣𝗣𝗨𝗗𝗢’s signature rich Tonkotsu broth with miso paste, Li Nanxing Dried Scallop Hae Bee Hiam, lime on the side for an additional tangy taste, fragrant garlic oil infused with sambal and a huge slab of flame-seared Chashu. When served, we were told to taste the broth first, then stirred everything in except the lime, and lastly squeeze in the lime for a tangy taste. Broth is very delicious and it tasted a lil like Tom yam soup too! A very local and unique taste, which got us hooked to it! Texture of noodles can be customised upon ordering, soft, medium, hard, our preference is soft noodles. Chashu came in a huge slab, flamed-seared beautifully, super tender and soft! We loved it so much and would totally visit it soon again before it ends. ⠀

Recently ate at Ippudo again after what feels like years (too many ramen places in SG to try!) and so this time around we ordered something different (but not new to their menu) - the salmon roll. What can I say, mentaiko is always a pleasure to eat and the one here really had a deep charred flavour! Plating was impressive too.
The perfect meldy of flavours of the rich savoury broth, chashu and Hakata style ramen noodles. Ippudo always manages to maintain their high standards or ramen througout all their franchises. Tip: order noodles with hard texture as it will continuously cook in the hot broth.

Just when I was feeling like having soup noodles (blame it on the rainy weather), IPPUDO’s brand new D.I.Y. Meal Kit got teleported to me (ok, it actually arrived the conventional way 😆). Didn’t waste any time preparing both the Hakata-style Shiromaru Motoaji ($15.30 a pack) and Akamaru Shinaji ($16.35 a pack) Ramen for lunch.
Definitely not to be mistaken as instant noodles, these have the signature creamy-rich, full-bodied tonkotsu broth arriving in frozen form. After following the clear, simple instructions to simmer it for about 15 minutes, the concentrated block, the result of an 18-hour cooking process prior, became exactly like the broth one would taste if dining at an Ippudo restaurant. When the lusciously smooth umami pork-based liquid met the al dente ramen (these noodles are meant to be cooked for only 30secs in boiling water), the combination went beyond my expectations. It was enhanced by the slices of pork belly chashu and marinated black fungus that were also packed in the D.I.Y. Meal Kit.
I might try my hand next time at making Onsen Tamago eggs and chopping spring onions to pimp up the ramen and take it to another level. But for today, it already qualified as a happy meal.
First tried Ippudo when its popularity blew up several years ago and it changed my perspective on the traditional Takata-style ramen. Expect innovative flavours such as this Bonito Tonkotsu, a full-bodied fish and pork broth blend exclusive to Singapore. The highlight of this dish, Japanese citrus pepper paste, is stuck on the rim of the bowl and enhances the broth with a zest of mild heat when mixed in.
Noodles are springy with customisable hardness and the key favourites, pork belly chashu and soft boiled egg, melt in the mouth with amazing flavour. Bamboo shoots, while uncommon in the mix, had a crunchiness that brought textural variety to the bowl.
the smell of garlic oil was really fragrant and it made the soup so so rich!! karaka-men always had a soft spot in my heart even though it isn’t spicy enough. loved the slight hint of spiciness in the ramen which deviates from the usual miso based tonkotsu ramen which we were used to.
noodles were well-cooked as usual & the best thing was probs the fact that the broth wasn’t overly salty and we can finish half the soup without feeling sick of it.
the only thing we didn’t like was probs the pork. pork in japanese ramen always had a tendency to have a strong smell and this was no exception (albeit better than the rest). but nonetheless, still a shop we’ll go back to all the time! & isn’t it perfect for the rainy weather these days

It’s great as it can be customisable on the hardness of noodles and level of spiciness on personal preferences. Loves it’s thin soft noodles that springy and the fragrant smooth pork broth with spicy miso paste and minced meat! It’s delectable and extremely addictive to sip down every drop of broth! Limited to 30 bowls a day, this collaboration with No Signboard was only available at its Mandarin Gallery and MBS outlets.
It was quite mixed feelings about this national dish creation. While we agreed that it was a soup-based ramen after all, we still kinda missed the thick eggy gravy of the original dish that would deliver more punch. Having this broth was like that of a chilli crab XLB we had somewhere. Though watery, the flavour was pretty on-point.
The piece of crab claw was an apt choice, while the 2 fried buns didn’t really find their place in the watery broth.
Overall, the creation was still worth the try at this time of the year when many chilli crab inspired dishes would be popping up around SG.

I really like the broth. It’s different from usual Japanese style curry.
It’s rich flavoured and not sweet and can taste the spices of South India such as masala, cumin seeds, cayenne peppers and also Ipuddo Signature tonkotsu broth.

Incredibly delicious melt in your mouth pork chasiu, one can easily forgive yourself for the indulgence. If only the bun can be closer to those used in Japan, it would be less sticky when you take your bites.

I know, cold ramen sounds odd but I kind of enjoyed this. Something different for a change! I would recommend adding a few droplets of the special chilli oil, lime and vinegar to elevate the flavour of the broth!

Featuring the ramen from the new Ippudo outlet at Star Vista that just opened today! We tried the Shiromaru Motoaji and Bonito Tonkutsu ramen. I preferred the former, because the broth was much lighter than the latter. However, the latter’s broth was quite interesting because the bonito taste was so strong, and there was a yuzu pepper paste to go along with it as well. All in all, the ramen was alright. Less salty than usual ramen shops here, but wasn’t particularly outstanding to me either.
The original tonkotsu ramen from Ippudo. Comes with pork belly & pork loin, beansprouts, black fungus, and spring onion. A classic Hakata ramen.
I left wishing the ramen was a little saltier and a little more tasty! I found it to be a bit bland and a little on the watery/diluted side. Felt like it was missing some oomph. Maybe the broth could have been cooked longer!
I chose the "Medium" noodles but I think "Hard" noodles would have been a better option as that would probably have been al dente.
Now their Karaka-Men has different level of spicyness! We choose Hot and it was acceptable! Also love their hardness noodle customisation coz I love it soft! Everything still taste as good as before!
