The never-ending queue is the reason why this has been on my wish list forever. I knew it was finally time for me to try when I was early on a weekday morning for work. This has got to be one of the shiokiest CKT in SG. The CKT served here leans towards sweet and savoury with a good amount of crunchy bean sprouts in there. Very sinful and definitely worth the cholesterol ใ$4
Operated by Ng Chin Chye and his wife for over 2 decades, this legendary stall has a history stretching back to 1939, and still attracts queues of up to 30 minutes.
.
Ng learnt the trade by watching his father and practising. To prepare for each day, up to 18kg of pork lard is deep-fried, and his blend of signature sauce is made with dark sweet soy and fish sauce.
.
Frying in batches of 20 plates each time takes great strength and skill, and his mastery of fire control ensures the noodles are evenly cooked with smoky wok hei / breath of the wok.
.
His version tends towards the wet and sweet side, with lots of gooey beaten egg, crisp bean sprouts, crunchy pork lard, bouncy fish cake, and plump blood cockles, combining for robust smoky sweet savoury salty eggy flavours.

My ah gong's favourite plate of char kway teow is also my father's favourite of char kway teow, and is needless to say my personal favourite plate of char kway teow.
My first plate of this CKT was at the ground floor of a now demolished block of flats behind Outram Park MRT Station and across the road from SGH, and we have followed them wherever they shifted to. It used to cost $2 per plate and now costs $4 per plate but the taste of the wet gooey and umami laden plate of CKT remains consistently golden.
One of the best CKT I had.
Available at $4/$5/$6 portion
Seeing the long snaking queue, I decided to have the $5 portion with additional egg, to make me wait worthwhile.
The queue ended up about 35mins long, this is around 11am on a weekday.
Got the $5 plate to share! Second time having this - we thought it was very average the first time we had it (attributed it to the fact that we didnโt have it piping hot), so we gave it another go. Felt that it was better this time. It was slightly wet but not soggy - I liked the sweetness from the dark sauce, and the egg that was incorporated in gave it an additional richness. Would prefer to have some egg bits to bite on tho, instead of it being fully mixed in; and perhaps a touch more smokiness/wokhei. I donโt eat ckt often bc of how unhealthy it is, so when I do I would like to maximise the enjoyment. But for those who eat it more regularly, I think this is a good option because it is tasty but doesnโt feel *too* sinful.
I don't think this is the *best* ckt Iโve had, but it still is a nice plate of ckt. I donโt mind queueing up for it if itโs a 15-20mins wait!
This is one of the best fried kway teow in Singapore! You can literally smell the dish when you are walking with it back to your seat. For $4, the dish included a generous serving of cockles! Would strongly suggest having this for breakfast, as the queue at lunchtime can be insane (>1 hour).
The queue was not as long as I remembered. The cockles are so small these days Iโm not sure adding an extra portion does it for me. Still has the same wok hei as before. The noodles are still moist and flavourful. Couldnโt find any egg in my plate though. The crispy lard was not in abundance but existed.
If I have to queue, Iโll go to Ghim Moh for my CKT in future.
Rightfully awarded the Michelin Bib Gourmand, the man behind the fiery wok is a legendary hawker himself and has been frying plates and plates of char kway teow for decades. With no disciple in sight or anyone to take over, all of us have no clue when he decides to call it a day. Hence, do drop by the stall, get in the queue and order up a plate of Singapore heritage before itโs all gone. Never mind if itโs not healthier choice, just savour the moment that we are able to taste an excellent plate of char kway teow with wok hei and the umami goodness now.

...
Tend to shy away from char kway teow coz weโre just not a huge fan of yellow noodles and bean sprouts. But this ckt is something we would gladly have, calories be damned๐ Havenโt had many ckt but we love this plate - greasy, flavourful, full of ingredients and pork lard. You could see the glistening oil and shine on the empty plate! The noodles were evenly coated in moist egg unlike some other stalls where the egg is just not that well distributedโน๏ธ. We dabao-ed this time but will definitely be back to have it there, piping hot out of the wok!!
Come at 9am, 930 will have a queue of 10 ppl alr
It's so different you cant judge by normal CKT standards. The wok hei is decent, and it's v soft and flavourful. Chili was shiok as well, the heat is real. Without the heat it's really comfort food haha. I certainly enjoyed my plate, but maybe not to the extent of queueing 45mins normally. It's very unique, not necessarily much better than a good plate somewhere else
The queue very short, maybe becoz i went 9 am morning.
Char Kway Teow was flavourful, with light wok hei (its 9 am, so not complaining ๐), served with hum and crunchy pork lard.

Hong Lim Food Centre.
Very famous char kway teow at Hong Lim food centre. The queue for this char kway teow is usually so long it snakes around the stall. Very well reviewed as well.
On the dish itself, it was overall a very credible and delicious plate of char kway teow. Taste wise it had a slight tang to it similar to the tamarind taste in penang char kway teow. Very nice and moist and smelled fragrant too. Could have done with a bit more wok hey but they were going for a wetter version which was fine too. Would recommend!
Finally tried this #michelin Bib Gourmand ๐ณ๐ฟ๐ถ๐ฒ๐ฑ ๐ธ๐๐ฎ๐ ๐๐ฒ๐ผ๐ ($4) after previous ventures to Hong Lim saw me leave empty handed. And it actually lived up to expectations.
-
The texture was moist but not greasy whilst the noodles were smooth and silky, mixing well with the beansprouts, fishcake and the generous helping of eggs.
-
It was flavourful with an eloquent blend of sweetness, umami, egginess, chili heat and a nice fragrant kick from lard, without the dark sauce's sweetness dominating the palate โ a trend at many other places, often to the extent of cloyingness. It was not remotely tedious as they masterfully balanced the flavour profile, which was also beautifully layered over with a smoky aroma.
-
The plate was also interspersed with decadently crunchy fried pork lard and fresh juicy cockles which bursted with intoxicating brininess, both ingredients that greatly complemented the richness.

Fried Kway Teow, $4. Totally worth the Michelin Bib Gourmand, this plate of fried Kway Teow is so awesomely shiokkkk!! Every plate is fried to wok hei perfection, with bits of crispy pork lard and lots of cockles, beansprouts! We likes it with more egg so we will usually top up $0.50 to add more eggs to our noodles. Love that unique black sauce thatโs so black with a little sweetness, making this plate so fantastic and irresistible. Mouth after mouth, we couldnโt stop feeding ourselves with it! .

Be prepared to q at least 45 mins to an hour on average on peak meal hours. If you want to avoid the crowd, you should go earlier in the morning as they open as early as 6am, closes at 3.30pm and closes on Sunday/PHs. Cravings & Tummy satisfiedโ๏ธ .

Joined the long queue and waited for this famous food up to 45mins. Although overall was taste good but prefer it to be salty than sweet taste.
At the unusual breakfast time of 8am, there was only two people in front of me so thatโs a way to try this without waiting. The noodles are flavourful without being overly oily and the cockles were very soft and chewy, among the best Iโve tried. It is truly a good plate of yummy fried noodles
