Chef Simone rendition of this sumptuous beer-marinated pork belly. It’s crispy and juicy, beautifully complemented with a tangy homemade sauerkraut and honey mustard.

Loved the creamy burrata. It was only 125g but definitely enough if you’re ordering it only as a starter. Even better paired w/ the bread and tomato dip!

Had the (1) Tagliatelle w pork sausage, mushrooms & black truffle sauce (2) Rigatoni w fresh tomato sauce, cheek bacon & pecorino. They were very generous with the meat in both, pasta was al dente but the rigatoni was slightly undercooked. Loved both the cream and tomato-based sauces. Worth it!

I attended a wedding dinner here not too long ago. The food and service were good, but nothing to scream about. Recently returned for lunch, when I had the festive menu. The main pasta dish was very good, but the Caesar salad or the dishes ordered by my lunch mates were quite meh. Prices are not exorbitant, but there are LOTS of restaurants in Singapore that serve better Italian food. Convenient for guests of the Shangri-La, but definitely not a gastronomic destination.

And of course, I had to leave some space for dessert as no meal is complete without some sweet treats. The sole dessert on the limited-time only 'With love from Momma' menu, I couldn’t resist having the Homemade cannoli cake stuffed with ricotta cheese, chocolate chips and mandarin orange zest ($15++).

It's my first cannoli cake and I am pleasantly surprised by the ricotta cheese filling - creamy with bits of citrusy zest and bittersweet chocolate chips. The mix of flavours were not at all cloying. The tangy sharpness from the pool of berry sauce also helped in cutting the richness. Everything was great, though it would be perfect if the crunchy Italian shell was slightly thinner in my opinion.

Available till 19 May, the special a la carte menu (With love from Momma) features authentic Southern Italian homestyle favourites prepared by Mrs. Maria Matera Carbotti - "Mamma Ria" - mother of Restaurant Manager Andreano Carbotti at Waterfall Ristorante Italiano.

Hence, for something more indulgent, beefed up with the Orecchiette pasta in braised veal cheek ragout cooked in Manduria Primitivo red wine ($38++). Robust, succulent and meltingly tender, it is the dish to go for if you are looking for a meat-heavy pasta meal in my opinion. The shredded parmesan was also a nice touch to amp up the richness. Furthermore, the al dente homemade pasta acted like little scoops, holding the sauce and delivering burst of beefy goodness with each spoon.

From now till Sunday (19 May 2019), savour authentic Southern Italian homestyle favourites prepared by Mrs. Maria Matera Carbotti - mother of Restaurant Manager Andreano Carbotti at Waterfall Ristorante Italiano with the limited-time only 'With love from Momma' menu.

The homemade Cavatelli pasta sautéed with mixed seafood in light tomato sauce ($36++) was a delight. Tangy with a tickle of spice, the flavours were surprisingly mild and leaned towards the sweet. Not over the top, the combination was homely and well-executed with the use of plump seafood - fresh mussels, clams and prawns.

Mother’s day might be over but I believe we are in agreement that there's nothing quite like mom's cooking. Thus from now till Sunday (19 May 2019), savour authentic Southern Italian homestyle favourites prepared by Mrs. Maria Matera Carbotti - "Mamma Ria" - mother of Restaurant Manager Andreano Carbotti at Waterfall Ristorante Italiano.

The special a la carte menu available during lunch and dinner features 3 heart-warming pasta dishes. And my favourite was the Orecchiette pasta with fresh homemade pork sausage, mushroom, broccoli and shredded Parmesan ($35++). Food for the soul, the plate was a simple medley of ingredients that provided a delectable yet clean-tasting punch with loads of textures within. I just loved how the savouriness, earthiness and sweetness of the individual elements came together perfectly.

wew. their orecchiette pasta with braised Stockyard Australian Wagyu ragu ($38++) is something i wish i could have everyday. Super beefy with amazing al-dente texture. The orecchiette is the perfect shape as it every shell catches a bit of the sauce and meat so its a delicious symphony of flavors with every bite.

Yes it's not the most affordable pasta around but the assurance that its as authentic as it gets is definitely worth the premium.

One of the best tiramisu I’ve had in Singapore.

The tiramisu ($16++) at the waterfall strikes a balance between classic and modern refinement. The decadent cube of layered Savoiardi ladyfingers, creamy mascarpone and cocoa powder makes for an indulgent dessert without being too rich or overpowering. The dessert pulled out all the stops with the premium coffee ice cream that complemented the tiramisu perfectly, resulting in a dessert that you’ll never forget.

Waterfall Ristorante Italiano has been serving Southern Italian cuisine to their regulars for a few decades. For this festive season, they will still be serving authentic Southern Italian dishes, but there'll be dishes with modern touches as well. This Avocado with Yellow Fin Tuna and Poached Lobster Medallions in Ginger Emulsion is one fine example.

The homemade orrechiette, or usually known as the ear pasta, has a nice bite and scoops up bits of the Wagyu stock that comes with the dish. This way, not only do you get to enjoy the braised stockyard Australian wagyu on its own, but the essence of it as well.

[LIMITED TIME ONLY TILL 2ND DEC] Handcrafted pastas that were made right in front of our eyes!

It’s a special occasion at Waterfall Ristorante Italiano of the @shangrilasg. The hotel flew Mamma Ria, the mother of restaurant manager, Andreano Carbotti, into Singapore from all the way in Italy!

I was fortunate enough to try all three pasta dishes that were exclusively made by Mamma Ria in true South Italian flair!

1. Homemade orecchiette pasta with braised stockyard Australian wagyu rayu. ($38++)
2. Homemade trottole pasta, grilled eggplant ricotta rolls and basil. ($32++)
3. Homemade cavatelli pasta with fresh seafood. ($35++)

Each of the three pasta dishes held a special place in my heart as they were amazing and had their own merits. The pasta integrated well with each of the sauces and had a bit of grit that reflected how raw and natural the pastas were crafted by hand. My favourite was definitely the wagyu ragu because the meat was so tender and hearty. Transported me back to my days in Italy.
