Minced meat was avg, chili was very spicy and jammy sweet. I don't like the noodles at all, it's almost like pasta really in terms of the bite? Very ribbony and smooth and heavy instead of chewy and springy as it should be for chili ban mee

Was so excited to try Hui Wei Chilli Ban Mian with my recent obsession and after finding out that they were listed in the Michelin Bib Gourmand. There was decent queue on a weekend afternoon but nothing too frustrating, especially since the stall owners were very amicable. It seems like many went for the soup option, but since this was deemed their signature and I love dry pan mee, I went along with this. The chilli was superb, packing a punch even though I went for medium level. Yes, the boss will ask you to choose xiao, zhong, or da la - and she recommends zhong as the normal level of spiciness! Chilli aside, the meatballs, a unique addition, was soft and nice, and not too gamey. Personally thought the ban Mian could be bouncier and not just soft, as it gave a very flat texture to it. That being said, I would return to try their soup noodles!

wow it was spicy. the chilli packs a punch. the minced meat seemed to be fried (can taste a bit of the fried taste) and the ikan bilis was crunchy enough. texture of ban mian was just alright, neither too hard or soft. the sauce was alright, expect a sweet and savoury dark soy sauce. I would like it better if they give more vegetables and ikan bilis though. but the star (irony as the dry chilli ban mee is the star) was the soup. I would come back one day just to try the soup noodles but will not go for the dry chilli ban mee again.

First time eating this, did not expect such a big portion.
Ban mian was smooth to eat, some other places, the Ban mian stick together too easily.
Chilli was soo good and so explosive.

After giving a good mix before digging in, what stood out most for me was the wonderful marriage of flavours, as well as their al dente handmade noodles. For those that can’t handle the spice well, I’ll suggest ordering it less spicy. That small scoop of chilli paste was really highly “effective”🙃.

I really really enjoyed the chewiness of the handmade ban mian noodles! Don’t think I’ve tasted such a great texture in ban mian before. Also, beware! Their chilli is very very potent. Ask for less chilli because it turned out to be so spicy that my brother couldn’t even finish it. Thankfully, I ate it before my brother stirred it since I can’t take very spicy food.
Boy was this spicy, even though we requested for it to be less spicy. But don’t let the description mislead you, this was tasty as hell! The minced meat was really flavourful and the noodles were perfectly cooked. The egg was also poached perfectly, and better than some cafes in fact. Only advice: don’t mix all the chili in if you can’t take spicy!

Chilli is really spicy, even for a chilli lover like me. Apart from that, it's quite a normal bowl of noodle. So I guess the kick here is in the chilli.

So I decided to check out the newly opened Geylang Bahru Hawker centre. Big, spacious. I zoomed in on this popular chilli ban mian stall that some have been giving praises. Okay... noodles are cooked aldente. Nice firm bite. Runny egg. Minced pork well seasoned. Sauce was dark and a tinge sweet (probably dark soya sauce was added). Chilli was mild. I did not get that heat at all. Maybe the stallowner did not add enough.

Overall, it was tasty. It just lacks that important ingredient which was the chilli. I understand different people have different tolerance for spicyness. But today's bowl felt very short of the heat. Worth a try. Just request for more chilli by the side.
