Signature Truffle Ramen (Dry) ($16.90)
I didn't know what I should be order for lunch so I decided to try it out since I saw the article about this ramen store at orchard gateway. I would like to say that it's quite unique and special on that time when they introduced the ramen back on 2016 ? tbh orchard got too much food choice for overrated or even underrated but sometimes I didn't know what I should eat it already since today is my last day at matchalax. I'm not saying that it's not disappointed or expected on the dry truffle ramen but I felt that noodles was slightly dry and hard to chew through and also not much truffle taste? But it's not that creamy and milky texture as I expected that I did managed to eat ramen finish. I did like their charshu also in terms of thickness level and also soft texture.

nice nutty truffle ramen with earthy flavours. they did nOT scrimp on those truffle slices. maybe thatโs why thereโs only 2 slices of char siu 3 HAHAH jokes. noodles are nice and springy !! neither too soft nor too al dente (like some places give rock hard noodles ripโฆ). my friends and i agree that itโs almost reminiscent of angel hair pasta?? 
highlight is def the mellow creamy onsen egg which brings the flavours together. plus the truffle slices. lots of umami followed by what i believe is konbu sprinkles??? the char siu is p okayyy maybe 8/10 tastes like regular charsiu in ramen, a tad tender but not SUPER juicy. LOL but yo do yourself a favor and try this when you donโt know what to eat in orchard๐๐๐๐ค
This black garlic ramen was disappointing because of how bland the tonkotsu broth was. It also lacked the garlic punch I was looking for. You could add a ramen egg for $2, which I did. Despite the great texture of the egg, it unfortunately did not have much flavour. The quality and texture of Chashu was great though.

This bowl of flaming hot tonkotsu ramen was indeed flaming hot. I personally thought that while the spiciness was bearable, it really packed a punch, and was much spicier than spicier ramens elsewhere. I enjoyed this bowl more than the black garlic ramen, because I thought it had much more flavour in general. Chashu was surprisingly soft and melt-in-your-mouth tender.

Back here for a second time! We tried the Signature Dry Truffle Ramen ($16.90),ย Black Garlic Ramen ($14.90) and a side of Pork Gyoza ($6.90).
This time round, I was pleasantly surprised by how moist the dry truffle ramen was as it seems to have more oil mixed into the ramen. I recalled that during my last visit a few years back, i did not enjoy how dry and sticky (from the eggs being mixed into the ramen) the ramen was.
I enjoyed the broth of the black garlic ramen as the black garlic flavour gave a different twist to the tonkotsu broth. The gyoza was rather average but a good side to pair with the ramen.

An alluring fragrance of truffles came wafting through the air right when the bowl of ramen was served onto our table. The ๐๐ซ๐ฎ๐๐๐ฅ๐ ๐๐๐ฆ๐๐ง ๐๐ซ๐ฒ consists of ๐๐๐ ๐๐ฉ๐-๐จ๐ฉ๐ฎ๐ก๐ ๐ง๐๐ข๐๐ฃ topped with ๐๐ฃ ๐ค๐ฃ๐จ๐๐ฃ ๐๐๐, ๐๐ก๐๐๐ ๐ฉ๐ง๐ช๐๐๐ก๐ ๐จ๐๐๐ซ๐๐ฃ๐๐จ and ๐ฉ๐ง๐ช๐๐๐ก๐ ๐ค๐๐ก, and complete with ๐จ๐ก๐๐๐๐จ ๐ค๐ ๐ฉ๐ค๐ง๐๐๐๐ ๐๐๐๐จ๐๐ช. The chashu slices were flavorful and tender as they were marinated for over 4 hours. There were subtle hints of charred taste as the chashu slices were blow-torched before being served. I really like how every strand of noodles here were well-coated with truffle aroma!
Next, I tried the ๐๐ซ๐ฎ๐๐๐ฅ๐ ๐๐ซ๐จ๐ญ๐ก ๐๐๐ฆ๐๐ง as well. As they boiled the broth for over 8 hours, itโs no surprise that a thick, creamy and flavorful broth results. The broth was of suitable thickness whereby you could enjoy it without feeling jelat.
I personally prefer the dry version as it boasts a stronger truffle taste. If youโre a fan of truffles, donโt miss this out!

Similar to the signature Tonkotsu Ramen except that this flaming hot Tonkotsu ramen was served in a fiery broth made of locally blend of chili and spice. I could actually see chili flakes in the broth that reminded me of the red cut chili, although the spiciness was already as good as that of chili paid. Definitely not for the faint-hearted like me, as the heat rushes up immediately. ๐ฅต Both ramens were served with crunchy black fungus, seaweed and spring onion. Btw, Kanshoku means โto finish eating every last bit of your foodโ in Japanese. Surely, I did!
The chilly weather lately calls for the need of a bowl of belly warming ramen! While @kanshokuramen is known for their truffle ramen, I decided to give their signature Tonkotsu ramen a try as I was craving for a classic ramen. You get to choose your preferred ramen texture and add-ons such as the Ramen egg. All it took was the smooth milky Tonkotsu broth, that was boiled over 8 hours without added MSG, to satiate my craving. The saltiness was just right with a hint of roasted nuttiness from the white sesame seeds. Might go for the soft ramen texture in future as the normal was still a little hard for me. What was peculiar, on the other hand, were the Charshu slices that tasted sweet. Iโd prefer my meat to be savory. Other than that, you can tell how tender it is as it started falling apart once picked up and notice that fat pull. ๐
spot the black truffle bits ๐๐ not a huge fan of ramen but this dry version really hit a spot for me. it was incredibly fragrant and tasty from start to finish. charshu wasnโt the best but noodles were truly the highlight. walk past the store and the smell of truffle will be wafting in the air. prices are reasonable too, worth a try!

I like how they are generous with their black truffle bits and oil. However, if you donโt like truffle, this dry ramen might be abit too โrichโ for you. โฃ

This dry ramen is perfumed with truffle oil and topped with some shavings of black truffle. Mixed it all with the onsen egg makes this a really yummy bowl of noodles!
When mixed together, the entire bowl is so aromatic and flavorful ๐ The chashu is amazing and I love the small truffle bits
Not a ramen person but I love this truffle ramen which is full of the aroma of truffle. Compared with the truffle broth ramen, its taste is much richer. However, it is a little bit dry which make it abit sticky. But still love it.
Not for the faint fainted. Is very spicy. Costing less than $20 still quite reasonable.
The dry truffle ramen ($13.90) was light and fragrant. The noodles were springy and I liked the burnt taste of the char shu as well.
The fiery tonkotsu ramen ($14.90) lived up to its name and was quite spicy indeed. It doesnโt come with a ramen egg so you need to add it in.
Loved how truffle paste was used instead of truffle oil. A very pleasant fusion dish and I would definitely come back here for more!
This ramen bar is probably one of the first in Singapore to introduce Truffle Ramen, both dry and soup versions. Did you actually know that Kanshoku means โto finish eating every last bit of your foodโ in Japanese?
I feel that the broth could have been much creamier and richer to suit my palate. But surprisingly for the charshu, they were deliciously tender and tasty, yet not overwhelmingly fatty.

You canโt get more truffly than this๐! The Truffle Ramen Dry ($16.90) from @ consists of Hakata style ramen tossed in a generous serving of shaved Italian truffle and truffle oil, complete with torched chashu slices and sous vide egg. The thin ramen is very fragrant and delicious, and I love the smokey touch of the charred chashu๐คค
