Kajiken is popular for their mazesoba and has a few outlets in Singapore.
Mix all of the ingredients together for 20 seconds as it written on the wall, which you should able to get most of the taste after that.
The all toppings included the char siew, half-boiled egg and chicken karaage. Compliments with a warm Paitan soup and cooked egg.
Grab the set to complete your meal with an additional side and iced lemon drink.
Always my go-to dry ramen place!! Love the flavour combination after mixing it well. There is free noodles upsize too.
Mazesoba with all Toppings ($16.80++)
If you're up to try all the toppings, go ahead and order this! This bowl comes with 2 charsiew, 1 Chicken Kaarage (Ala Carte $4.50/ 3pc) which was really crispy, and 1 pork belly cube which was pretty flavourful!
* All mazesoba comes with free flow barley tea and eggs, and a bowl of soup (non-refillable).
Are you a fan of mazesoba? How about the idea of free upsize noodles? 😉
Grilled Cheese with Cod Roe Mazesoba ($17.30++)
Personally a huge fan of mazesoba, which some term as "Japanese Bak Chor Mee" 🤣. Honestly my first time trying Cheese Mazesoba, and I have to say I quite enjoyed it! As a fan of cheese, I didn't find it to be extremely jelak, and I enjoyed the flavour combination for this dish! Only qualm is that the cheese made the noodles stick together quite a bit, and I'd prefer for the Char Siew to be more tender and flavourful!
Super love the whole combi - QQ ramen, spicy minced meat, LOTS of spring onion, runny egg 😍 Used a Burpple 1-for-1 deal on this and it’s super worth! Would come back for more.
⭐️ 4/5
One thing that was really cool about Kajiken’s concept was that they offered a free upsize of the noodles, which meant that one could have a more filling meal without burning a hole in their pocket (but of course their hard-boiled eggs would be the low-carb option).
Apart from that, the Hokkaido Mazesoba (S$17.30) also included minced salmon, cod roe, and a small slice of butter to enhance the savoury aspect of the dish. Sadly, today’s turn-off was the overly-pungent bamboo shoots that reminded me of a less-than fresh sea urchin, making it somewhat agonising to eat on every time I chewed on some.
Neglecting the unsatisfactory parts of this meal, it was still a pretty filling meal, just that I was determined to get a dessert or drink (read: bubble tea) to cleanse my palate.
Unlike the famous version full of garnish, this type is more like a dry ramen. I actually enjoyed this more because the other version is jelak. The chashu however was really mediocre.
Mixed it for 20s as per the instructions. Their noodles were springy and soft. The texture of the noodles went well with the runny egg and spicy minced pork. The small portion of soup provided was quite salty. Tea and a hard boiled egg were available on each table. For $12.80++ I really enjoyed this dry ramen! You should try it if you haven’t tried mazesoba before, it’s quite an experience.
Second time eating this. Abit gelat from the noodle and since i have tried it before also, it was underwhelming for me
When an eatery is confident enough to only sell 1 kind of food, chances are they do it really well. 👍🏻👍🏻👍🏻 Tucked on Level 1 of @payalebarsquare is Kajiken, also Singapore’s first dedicated dry ramen “maze soba” shop! 😊 Lots of choices here at Kajiken for you to choose from! 😍😍😍
.
If you exhibit traits of aboulomania, simply go for their Mazesoba with all toppings (U.P $17.30++, now $15.80++)! 💕 Comes with soba & free noodle upsize if you’re a big-eater, this is quite a good deal! ✌🏻✌🏻✌🏻

Meat lovers are bound to enjoy the slices of pork char siew 🐖, braised pork, & chicken karaage (deep-fried chicken) 🐓. My favourite was the char siew, which was extremely succulent despite having quite a substantial thickness. 🤤🤤🤤 They just fell slightly short of having that melt-in-your-mouth texture as the cut used was rather lean but still extremely well-executed as I personally don’t like fatty meats. 🤣 The pinkish slices even glistened under the light (like some smoked duck), evidence of its freshness & tenderness which was so delightful. 💯
.
Their braised pork was extremely savoury & well-marinated but naturally tougher due to the thick cut. 👌🏻 While it could have been more tender, it certainly scored high on taste! ✔ Similarly, the chicken kaarage donned a crispy exterior fried to the perfect golden brown, while the interior remained soft & juicy. 😋😋😋 Pro-tip: separate the kaarage from the mazesoba immediately to retain its crisp! 😉
.
The savoury seasoned lavier has a distinctive taste which mellows the ‘siap’ taste of the spring onions 💚, which gives a nice crunch together with the leek. 👍🏻 When stirred, the springy dry noodles are generously coated with these ingredients, cohesively brought together by that perfectly runny soft-boiled egg 🍳 that lends a creamy & luscious mouthfeel! ❤❤❤

Definitely worth a try or revisit!
Mazesoba can be explained as Japanese dry Ramen, which Maze means "to mix" and soba simply means noodles.
How to eat Mazesoba? First you mix everything for 20 seconds. Then add vinegar or chili oil, depending on your preferences. When you had finish eating, you can request for a small portion of rice to mix with the remaining sauce by mentioning “OIMESHI!” to their staff. They also offer free noodles upsize, so it's guarantee that you'll leave the restaurant with a happy stomach.
They have pretty affordable price too; Taiwan Mazesoba Nagoya Style ($12.80++) Original Mazesoba with Karaage ($15.80++) KAJIKEN Singapore is the first shop dedicated to Mazesoba in Singapore, and they are conveniently located at Paya Lebar Square #01-86.
Thanks @kajikenatpls for the lunch.
First time trying this at Bugis branch and definitely worth it! Shiok with you self add vinegar and chili oil to suit your strong taste.
My first time trying Japanese dry ramen and I wish I had tried it sooner!
Upon mixing thoroughly, the noodles were glistening with oil, the golden egg yolk and Kajiken’s top secret sauce. The noodles itself was rich in flavour as I could taste a distinct blend of wheat that became accentuated with the addition of the sauce. It’s no wonder I slurped it all in an instant.
I had the mazesoba with all toppings that comes with an optional free upsize. The char siew was tender while the karaage was crisp. I’ve definitely fallen in love, for me, with a new Japanese dish.
If you like cheese and mentaiko, you’ll love this! The cheese has a slightly ‘smoky’ taste from the grilling and isn’t too hard - which means when you mix everything, you can get cheese and mentaiko on all the noodles. It also comes with an onsen egg, which went well with the other two ingredients.
You can add more noodles for free but I thought that the regular serving was more than enough.
Have been eyeing this for a long time and finally got down to try! Pleasantly surprised by the rather generous dollop of mentaiko that was sufficient to go around, but I think the equally generous mayonnaise muted the former flavor quite a bit. Texture of the noodles was springy but it felt a little too dry, and it got jelak quite quickly - adding the soup helped a bit!
Had the nagoya style and all-toppings. Both were great!! The Nagoya's minced meat gave a nice spicy kick to the noodles. For the All-Toppings, I liked the braised pork best.
Ordered their signature mazesoba, the ramen comes with a creamy soft boiled egg, spicy minced meat, a field of spring onions, shredded nori and springy ramen noodles.
Add vinegar and chili oil (for extra kick) right before you eat, mixed well and you’ll experience the perfect combination of noodles, sauce, oil, chili oil and vinegar.
A bowl of Mazesoba Nagoya Style is priced at $12.80, the portion was quite substantial and their soup quite comforting. The downside is the dish (soft-boiled egg & minced meat) not served warm when arrived at the table. It could due they have pre-prepared the ingredients before you ordered.
The seating space is quite cramped with small size of wooden table and chairs.

Kajiken (Paya Lebar Square)

The noodles were springy and chewy and the sauce was flavourful. It had a bit too much mayo in my opinion which made the mentaiko taste stand out less. For $18 I feel that the price is a bit steep for the amount of ingredients that are in it (I added $1.50 for a flavoured egg).
Kajiken is my go-to dry ramen place. Glad they’re opening more outlets. Drizzle vinegar to give it a good kick. If the noodles aren’t enough for you, you could ask for a scoop of rice to go with your unfinished minced sauce. (7.5/10)
