This Michelin one-starred stall is opened by a retired Crystal Jade chef who has worked in Crystal Jade for 17 years. It was originally located in Sixth Avenue but it moved to its current location at Bukit Batok East Avenue 5 when the lease was up.
I am not a fan of the signature wontan mee which has a very strong lye taste, but I am totally in love with its Chicken Feet. Made using traditional Cantonese recipe, the chicken feet is steamed till it is fall-off-the bone tender with spicy kick that you don’t find elsewhere.

I knew I was in for a treat once I saw the amount of love and expertise that went into handling the noodles and simmering the wantons by the old man mending the store (presumably the owner, who’s known for being the ex-head Chef at Crystal Jade). And I was right! Perfectly cooked wantons with just the right amount of pork to shrimp ratio atop a bed of QQ noodles — flavours are simple, but the execution of all the components are really spot on. Tip: Don’t forget to request for the fried chilli flakes in oil to mix in with your noodles, which they display at the shopfront. You able to get this affordable "Crystal Jade"wanton mee by former "Crystal Jade" head chef.
You know how it is like when you stay in a certain area and funnily may not have ventured to try the food in your Vicinity ( because the grass is always greener on the other side ). I was encouraged to try master Tang's noodles after reading a few good reviews about it and I must say that at SGD 3.50 ( together with a clear bowl of soup ), the quality of Yue wantons and noodles speak of the TON of love and care that the experienced Chef puts in his cooking. The petit wantons are tasty and well seasoned and the noodles are cooked to perfection with the right spring without the strong alkaline taste. I like that the portion of vegetables is generous . Pair it up with the free flow Chilli oil at the counter ( which screams take me !) and you have a sincere plate of authentic hk Style Wanton noodles at a very affordable price.
There are plenty of good reviews for his beef brisket noodles as well but since beef is not my cup of tea , please do try and decide for yourself :)
Be sure to locate the right wanton noodles because there are 3 wanton noodles shop within sixth avenue. Master Tang is situated in the coffee shop just next to Raffles Medical clinic.
The braised brisket and tendon easily melted in the mouth. The noodle had a hint of ammonia smell. The trick was to add abit of their green chilli vinegar to neutralize the smell. Couldn't have enough of this!!!! .

Brought my parents here and they were commenting how perfectly cooked the noodles were at first bite. They expected all three bases to taste similar (cos they said all three looked the same 😅), but each plate had its own flavour profile owing from its respective source of zhup — the wanton noodle was a teenie weenie bit more on the sweet side, while the savoury chicken feet noodle was the only spicy one. You can, of course, spam yours with the Crystal Jade-like chilli for that fiery, umami punch. The beef brisket pieces were tender after hours of simmering in the flavourful zhup.
I don't really eat chicken feet, but my dad is a fan and he said that it was well braised. The wantons and shrimp dumplings were super tasty and texturally spot on too. I will definitely be back when I'm in the area again.
p.s. Do avoid sitting at one of the the outermost tables as the awning does not extend all the way, and you'll have nothing to protect you and your food from falling leaves or worse, bird droppings. 😆
If you think that the noodles served at this stall in Kopitown Sixth Avenue very much resemble the springy wanton noodles at Crystal Jade, you're on the right track. Owner Mr Tang was formerly the head trainer at the restaurant chain, and more recently ran a stall in Chinatown. Mr Tang's noodles here are springy, the dumplings are plump and juicy, and the accompanying chilli paste packs a whole lot of punch. The icing on the cake? Prices are a fraction of what you would pay at an upmarket Cantonese noodle house — the Wanton Noodles cost only $3.50. Pro tip: According to Burpple Tastemaker Xing Wei Chua, patrons tend to order several portions at a go, so be patient.

He now cooks at a humble stall at 6th avenue, where a queue is formed early in the morning for his springy Cantonese style noodles.
I liked the wanton noodles a lot better than the beef brisket, which has a weird after taste.

Initially wanted to give their Dumpling Noodles to try but they were already sold out when I got there. Had to discover this hidden gem since school is pretty much nearby especially since a former Crystal Jade chef is at helm here. Waiting time can be a little long, and most of the seats in the Kopitiam doesn't really make for conducive eating (the street side tables are pretty much subjected to everything and anything that is falling/dropping from the trees), but if you are willing to wait, be rewarded with a plate of springy noodles coated with a thick, savoury but light tasting sauce with plump wantons packed with lots of meat to bite. Remember to spam that chili so you get a umami yet mildly spicy touch to the dish. Try to dine here only if you have the luxury of time though; most customers here order more than one portion (usually two to three, with an additional one more on takeaway), taking roughly 5 minutes to complete or even more especially if there are orders for Pork Knuckle noodles. Had only six people ahead of me but waited roughly around half an hour; do try if you can spare that amount of time though!
Former head chef of Crystal Jade and man behind CJ's wanton mee, Master Tang previously had a stall in Chinatown but is now here in Sixth Avenue! Prices are super affordable - $3.50 Wanton Noodle, $3.50 Wanton Soup, $5 Pork Knuckle Noodle and $6 Beef Tendon Stewed Beef Brisket Noodle, etc. My Wanton Noodle had al-dente springy egg noodles, fresh juicy wantons and not forgetting the CJ lookalike plus tastealike chili. Though I would have liked a more flavorful soup, it was still a satisfying plate of noodles so similar to CJ's! At this price? I'm so coming back!

Although the Master no longer young, he still show his skills in cooking the noodle. It is springy and crunchy.

The tendon is to die for as it melts in your mouth. You definitely can feel the collagen. The brisket slightly dissapointing, still a bit hard, can do with more cooking time.
